I am not a football fan but I like some game day food! I could eat buffalo spiced foods all day long. Instead of just making buffalo cauliflower bites I decided to whip up some Buffalo Cauliflower Wraps with Blue Cheese Hummus. Everything your buffalo wings have but more! Yes buffalo cauliflower pieces, celery, and Blue Cheese Hummus on a sprouted tortilla. Delicious, healthy, veggies, they are filling, and a perfect way to enjoy your game day food for dinner on Meatless Monday, or any day! If you want you can always add in chicken, tofu, or protein of choice you just may want to add a little more buffalo sauce. Pair the wraps with kale chips and you have the perfect meal, well if you ask me. My husband loves these, he isn’t a hummus fan but still liked them and went back for more. If we can eat these while watching Sunday/Monday night football I will “watch” football every week!

 

What is one of your favorite game day foods/snacks?

 

Buffalo Cauliflower Wraps

Makes 4 servings

1 head of cauliflower, broken into 1/2-3/4″ floret chunks (my trimmed cauliflower florets came to 1 1/2lbs)

1 TBSP extra virgin olive oil

1/3c buffalo sauce, such as Frank’s or Wing Time

8 stalks of celery, finely chopped

Blue Cheese Hummus, recipe below or blue cheese/ blue cheese/ dressing of choice

4 sprouted tortillas, or gluten-free brown rice tortillas

 

Blue Cheese Hummus

1 – 15 oz can garbanzo beans, drained

2 cloves of garlic, grated

2 TBSP lemon juice

2 TBSP extra virgin olive oil

1/2 tsp sea salt

1/3c blue cheese crumbles*

 

*For dairy free/vegan use 2 tablespoons nutritional yeast, 1-2 tsp miso, sea salt and pepper to taste. It will not taste like Blue Cheese but pairs well.

 

In a Vitamix, or food processor, blend garbanzo beans, garlic, lemon juice, and until smooth. Fold in blue cheese or nutritional yeast, miso, and salt/pepper. Store in a sealed container in the refrigerator for up to a week.

 

Prepare Blue Cheese Hummus if making. Clean cauliflower and cut florets off and into smaller pieces.Β Heat oil in a large skillet, with a lid, over medium heat. Once oil is hot add cauliflower and sautΓ© for 2-3 minutes. Place cover on and cook for 5 minutes, stirring half way through. Add buffalo sauce and toss cauliflower until evenly coated. Cover and reduce heat to low and simmer for 10 minutes. Remove cover after 10 minutes and cauliflower should be about al’dente, not too hard but not mushy it should have some bite to it. Turn the heat back up to medium/ high and cook until the sauce thickens and cauliflower starts to caramelize. Heat tortilla, spread with Blue Cheese Hummus, top with the buffalo cauliflower, and celery. Enjoy!
