Cinnamon Sweet Potato Protein “Ice Cream”

 

This weeks Meatless Monday from A-Z challenge ingredient is potatoes. I knew right when it was posted that I would be posting my Cinnamon Sweet Potato and Sweet Potato Protein “Ice Cream” recipe! I did have second guesses and 4 other recipes I was debating , it was a tie between this and cookies when I let my girls pick, which will also be posted soon. Not going to lie I first made this one after a workout for breakfast, yep ice cream for breakfast! Basically being a thicker version of shakes I also make so it was healthy, but felt like I was living on the edge! Sometimes I also add Gelatinized Maca to mine, if you normally add it to your shakes/smoothies it can be added to this ice cream as well.

 

Below are the recipes for both the Cinnamon Sweet Potato and Sweet Potato Protein “Ice Cream” if you want to make just one batch and do half protein and half without (you want some for yourself and want to share with your kids) make the non protein version, remove portion you want without protein powder and blend the remaining with protein powder and splash of extra milk as needed.

For both recipes you will need to freeze the banana and sweet potato before making if using a Vitamix (or high-speed blender that can make ice cream). Chop the banana in chunks before freezing and I find it easiest to place the sweet potato in a plastic bag and flatten, adding banana chunks to the top of the bag and laying flat to freeze. I do this so I can break the sweet potato in chunks before making. Alternatively you can also place the banana and or sweet potato in ice cube trays.

If you don’t have a Vitamix, high-speed blender, or food processor that can make ice cream blend sweet potato, banana, almond milk, and cinnamon together before freezing and freeze, stirring every 30 minutes or so, until desired consistency.

Cinnamon Sweet Potato “Ice Cream”

Makes 3 1/2 cups

1 c packed cooked sweet potato, frozen (was almost a whole one in the size I had, you can use a whole and adjust milk as needed)

2 ripe bananas, frozen into chunks *

1 1/4- 1 1/3c unsweetened almond or coconut milk (used So Delicious Unsweetened Almond Milk Plus, for the extra protein)

1 tsp cinnamon, or more to taste (add more if you want a strong cinnamon flavor)

1-2 TBSP coconut palm sugar, optional (it is delicious without but if you want it a little sweeter it is a nice treat when added)

 

*If you aren’t a fan of bananas you can use more sweet potato.

 

Add milk, cinnamon, frozen banana chunks and frozen sweet potato into a Vitamix and blend using tamper tool until blended together and smooth. Enjoy as soft serve or freeze until desired consistency!

1 scoop vanilla protein powder (used Vega Performance Protein, Vanilla, have also made using Vega Protein Smoothie Viva Vanilla)

1 tsp cinnamon, or more to taste (add more if you want a strong cinnamon flavor)

 

*If you aren’t a fan of bananas you can use more sweet potato.

 

In a Vitamix or high speed blender blend milk, cinnamon, and protein powder until smooth. Add frozen banana chunks and frozen sweet potato and blend using tamper tool until blended together and smooth. Enjoy as soft serve or freeze until desired consistency!
