It’s apple season! I am all over everything apple and pumpkin! I got bit by the fall bug a little early this year when we came home from our trip to NYC and DC to temps in the 60s! It was so heavenly. I went to the store to buy food as we had been out of town and needed to restock the fridge and out produce, with the exception of what we had in the garden. Of course I went to the stores over and over as I kept getting off track by all the apple and pumpkin foods popping up. I tried to contain my excitement until we got to September and wouldn’t you know it the first week of September we have temps in the high 80s and low 90s but what’s worse is the humidity! Had to go in a different direction to get my fix and use up the apples we picked in Wisconsin on the way home, cold Apple Pie Smoothie Bowls and Smoothies to satisfy my craving on these hot days!

Not only did this smoothie bowl satisfy my craving for apples and fall foods and keep me and my house cool, it was easy to make! While I do suggest letting your chia seeds soak a couple of minutes or soaking overnight if you are in a hurry it really does make this bowl extra thick and I’m sure you won’t be disappointed you did it. You can make this into a delicious smoothie but I prefer a smoothie bowl so I can add more of my favorite muesli and chopped apples to the top. I really enjoy this smoothie bowl for breakfast as it leaves my tummy full and gives me the fuel I need to tackle my day but it is great anytime and I even make if for snack, just being careful to make it smaller or not making it too close to dinner or I won’t be hungry.

While I know the days of warm baked apple goodies and oatmeal are coming I will continue to get my fall fix this way until the weather cools down again. Or at least I have options for when Mother Nature is having one of her hot flashes when it should be nice and cool out.

Now for a funny little story… I wrote and photographed this recipe 2 weeks ago, we have had these smoothies and smoothie bowls a number of times and things have been so crazy that I forgot I already had it ready to go. So when I whipped it up yesterday I thought oh I better get this photographed and written up, so since it photographed so nice the second time I decided I had to share those too. I am ready for fall and things to settle down, anyone know when that is going to happen? If it isn’t happening soon can I buy a few extra hours a day?

 

Easy as Apple Pie Smoothie Bowl/ Smoothie*
Makes 1 smoothie bowl, 1-2 smoothies
1c non dairy milk
1 scoop vanilla protein powder (used Vega Vanilla Performance Protein for Smoothie Bowl with chopped apples, Vega One for other smoothie bowl, and Vega Protein & Greens for the girls smoothies)
1 apple, quartered and cored, or chopped plus more for topping optional (blended with 1 small-medium apple and topped with 1/2 an apple)
1 TBSP chia seeds
1-2 TBSP oats or muesli, plus more for toppings optional (used Seven Sundays Ginger Pear Macadamia Muesli and blended 1TBSP in and sprinkled more on top)
1 tsp cinnamon

Smoothie bowl blended in 1 tbsp muesli and topped with more plus 1/2 small apple….. Smoothie is half serving with a little more milk added

*To make a smoothie add in more milk to reach desired consistency (about 1 1/2 cups is what I like), you don’t have to let the chia seeds soak, and use only 1 tablespoon of oats or muesli.

 

Pour milk into your Vitamix, or high-speed blender, and sprinkle chia seeds over the top. Let sit for a couple of minutes while you gather your other ingredients. This step will result in a really thick smoothie bowl. If time is an issue you can also soak your chia seeds in your milk in a glass in the refrigerator the night before and just pour into the blender with remaining ingredients in the morning. I like to add my protein, oats/muesli, and cinnamon and blend before adding my apples so I really limit the time that is needed in there so my bowls stay thick and cold and I don’t have powder flying and sticking to the edges. Blend and then add in apples and blend until just blended, using tamper if needed. Pour or scoop into a bowl and top with additional muesli, chopped apples, or other toppings as desired. Enjoy!
