I love it when I find new products I love, and it is even better when they are made locally! Don’t worry while this inspiration came from a local product it is sold at Target and Whole Foods (where I bought it)! So what is this new love? Seven Sundays Ginger Pear Macadamia Muesli! I have always loved granola but fell in love with muesli last year in Ireland. Not sure what it was about it there but it was so fresh and wholesome and not like ones I had found back home. I tried a couple when I got back but they just weren’t the same. Seven Sundays was the first I found that real lives up to what I loved and remember. Even better with the amazing flavors. Being a big fan of ginger this one had my name written all over it, as well as their Vanilla Cherry Pecan but that is another story. So back to the ginger…. I had to make a ginger smoothie bowl and oh it is so good with the bite from the ginger and sweet pears. While the first smoothie bowls I made with almond milk the real magic happened when I went downstairs to grab my oldest some Bai5 and found a Congo Pear Bai5, yep I ran right back up and blended a bowl and it was amazing! I also had to test it with maple water which was also good and I have to say I prefer that over the almond milk in this bowl. Running out of pears I also had to use part frozen apples one day so you can modify where needed using what you have. I also like to add some ground chia to thicken it up and protein powder to really start my day off with a bang. Or maybe the bang is just my taste buds from the extra ginger I like to add. Top it with the Seven Sundays Ginger Pear Macadamia Muesli and I can just close my eyes, let the sun hit me, and just drift away.
Ginger Pear Smoothie Bowl
Makes 1 serving
1c Bai5 Congo Pear, or coconut/ maple water
1-2 frozen pears or apples
1 TBSP ground chia seed, ground flaxseed*
1/2-1″ chunk of fresh ginger, peeled
1 scoop vanilla protein powder, optional (used Vega Viva Vanilla Protein Smoothie)
1/4-1/2c Seven Sundays Ginger Pear Macadamia Muesli or muesli/toppings of choice
*To make a thicker smoothie bowl I will sometimes add ground chia seeds or ground flaxseed to thicken and use less frozen fruit to cut down on the sugar and add a nutrient boost. I will either add to the liquid and let sit a couple minutes or blend it all together and place it in the freezer for a couple minutes.
In a Vitamix, or high-speed blender, blend together Bai, chia/flax if using, ginger, and protein powder if using until smooth. Add in frozen pears and or apples until desired consistency is reached. Pour into a bowl and enjoy or if needed place in the freezer to thicken a couple of minutes while cleaning blender. Top with Ginger Pear Muesli or toppings of choice. Enjoy!

When I find a good sale on fruit I buy a lot because of how much we go through it. There are times it ripens quicker than I expect, we have a lot of fruits ripening at once, or we just don’t go through it as quick as I think we will so I freeze it. No way am I letting fruit go back that can be frozen and put into smoothies! 😉

It is really good, and locally made here but they sell it at Whole Foods and Target. They also have a Cherry Vanilla that the girls love!
