I like layered smoothies and playing with colors and flavors. Snacking on a dried dragon fruit slice and wishing I could get frozen dragon fruit here I decided to blend up the dried slices and it resulted in this delicious smoothie. Dragon fruit has a sweet flavor similar to pears and kiwifruits. This superfruit is a source of omega 3 essential fatty acids, vitamin C, protein, fiber, magnesium, vitamin B, phosphorus and iron. Dragon fruit also contains many antioxidants. Nothing beats a nutrient rich green smoothie, except of course a pretty layered green smoothie!

 

Green Dragon Fruit Smoothie

Makes 1-2 smoothies

Green Base

1/2c fresh or frozen pineapple, frozen will be thicker

Big handful or two of greens (used Earthbound Farms Power Greens, blend of spinach, baby kale, and chard)

1/2c water

1 scoop vanilla protein powder, optional (used Vega One French Vanilla)

ice, optional

any additional supplements such as spurlina or maca you would normally add to your green smoothie as desired, optional

 

Dragon Fruit Layer

1c non dairy milk of choice (used So Delicious Unsweetened Almond Milk Plus, for added protein)

1 1/2 frozen bananas

1 serving (1oz/28g) dried dragon fruit (used Navitas Naturals Dragon Fruit Slices)*

 

*If you are in an area that sells frozen dragon fruit, also called pitaya, you can also use that.

 

In a Vitamix, or high-speed blender, blend Green Base ingredients until smooth. Divide mixture into 1 large or 2 regular glasses. Rinse blender and blend Dragon Fruit Layer ingredients together until smooth. Pour over the green base. Garnish with sliced pineapple or dragon fruit if desired. Enjoy!
