I will start off by saying I have this love for the “Elvis” combo be it a sandwich, brownies, or oatmeal. The traditional Elvis is a peanut butter, honey, banana, and bacon toasted sandwich. While I’m not a fan of bacon I like the flavor of bacon, weird I know. I also have the same think with BBQ so I often add barbeque sauce to strange things like coleslaw or something other than meat. It is the smell and flavor of the seasoning. I would I often thought of getting bacon salt. Last year when I was vegan attempted tempeh bacon but wasn’t really a fan of it. I use to just eat the traditional Elvis, then went to just peanut butter, banana, and honey sometimes. So many things I would eat and still eat with peanut butter and bananas, it is a match made in heaven! I also liked it with potato chips. Yes salty crunchy potato chips. As a kid I remember eating pb&j with chips all the time. I also use to have a weird sandwich I would order at Subway, just a cheese sandwich with lots of pickles, banana pepper, and jalapeños. I would get a bag of chips and smash those in there. Yes again a little odd and clearly not healthy. I even remember my now husbands face when I ordered it 14 years ago while we were dating and first stopped at a Subway on a road trip. Recently a craving came over me for a traditional Elvis sandwich so I went to Whole Foods and got 3 kinds of vegan bacon hoping to find one I would like flavor and texture. The first one, Upton’s Naturals Seitan Bacon, was actually pretty good so I set out to make my sandwich but if I was going I had to go all in… yep not just a peanut butter, honey, bacon, banana sandwich. I made the whole grail of Elvis sandwiches, a peanut butter, honey, bacon, banana, potato chip, jalapeño, banana pepper sandwich!! It hit the spot so I had to share it. Not that anyone would make it, but really everyone should try it because you can’t knock it until you try it and I really don’t think the combo is that strange but because it is ME. Also maybe secretly hoping there is someone out there that will fall in love with the combo like I did because really I think it is genius! I’m not an Elvis fan but since it was inspired by his sandwich and really is just a version of it I had to come up with a name that would be fitting….there was only one and it came to me right away, I give to you the Hunk Of Burning Love Sandwich. Also because I wondered what Elvis would drink with his sandwiches I thought about that too and to what I use to drink as a kid and to what would go well with it and there was only one answer, grape soda so I had to crack open a Zevia Grape Soda to enjoy with it, gulp… ahh!

Hunk Of Burning Love Sandwich
Makes 1 serving
2 slices bread (used Silver Hills Big 16 Sprouted Bread)
4 slices bacon (used Upton’s Naturals Seitan Bacon)
1 ripe banana
2 3 TBSP peanut butter (used Peanut Butter & Co Smooth Operator)
1-2 TBSP honey or maple syrup
Small handful of potato chips (used Kettle Brand Real Sliced Potatoes Baked Sea Salt Chips)
a few jalapeño slices, fresh or pickled
a few pickled banana pepper slices

 

Cook bacon per package instructions. Heat griddle to medium and spray outsides of bread with coconut oil spray, or spread with butter spread. Spread inside of one of the slices of bread with peanut butter, drizzle with peanut butter, top with bacon and place the coconut oil side down on the hot griddle. Top with chips and peppers. Slice banana in half lengthwise or into pieces lengthwise and place on top of the peppers with the other slice of bread, coconut oil side up. Once grilled, carefully flip and grill other side. Enjoy!
