Happy St. Patrick’s Day! Weather you are Irish or not I think a lot of people have fun with all the green, Irish food, and shenanigans on St. Patrick’s Day! As stated before after spending a month in Ireland last summer my views of what I thought Ireland was like and their foods has changed. This is definitely not a traditional Irish, I actually don’t even think they sell Lucky Charms there, but fun. The girls were on the hunt for Leprechauns everywhere when we were there as “A” was told to find one and bring one back for grandpa. I am not one to buy a lot of sugary cereals, I do buy them from time to time they just aren’t an everyday thing, but every year I always buy Lucky Charms to have for the week of St. Patrick’s Day, sometimes I need a couple since my husband and I will relive our childhood and eat whole box ourselves. Making a smoothie bowl one morning I saw the box I had stashed and yep I had to because they are Magically Delicious! Yep it was good so I make the girls rainbow swirled smoothie bowls, add them and yep it was truly a Magically Delicious Smoothie Bowl! Yes I am aware Lucky Charms have sugar and aren’t the healthiest but again moderation and there is a lot of nutrition in this smoothie bowl and fun so in my book it’s a win for St. Patrick’s Day, or as “A” calls it Clover Day.
Someone once asked me about all my “desserts for breakfast” as I like to create breakfasts inspired by my favorite desserts. I thought about it and I am one who craves sweets and I realized not only do I not crave sweets as much if I start out my day with something sweet but also as far as the kids go giving them sugar in the morning they have all day to burn it off and to me that is a much smarter choice than having some sugary dessert right before bed. Not that we don’t have those from time to time too. I honestly am not one to deprive my kids, as you know from our fryo Instagram posts but it is all about moderation and making smart choices while still having a balance. The girls are very active, we all are, and eating healthy 90-95% of the time works for us.

Magically Delicious Smoothie Bowl
Makes 2 servings
2 large frozen banana divided, chopped
1 1/2- 1 3/4c coconut milk, almond milk, or non dairy milk of choice (used So Delicious Unsweetened Vanilla Coconut Milk)
1c frozen strawberries
1c spinach
1 scoop vanilla, natural, or tropical protein powder, optional* (used Vega Tropical Tango Protein Smoothie)
1c Lucky Charms cereal

 

*Protein powder can be added to one layer or separated out between layers as desired. When using Tropical Tango Vega Protein Smoothie I like to add it to the green layer. Otherwise I add it to the layer it would pair best or look best with (if your powder changes the color).

 

In a Vitamix, or high-speed blender, blend together 2/3rds of the bananas, and 2/3 cup of milk until smooth. Pour 2/3-3/4 of the banana smoothie into a bowl or glass. Add strawberries and 1/3c milk to the remaining banana mixture in the Vitamix and blend until smooth. Pour into the bowl or glass. Rinse Vitamix (optional) and add remaining bananas and 1/2c milk (3/4c if adding protein powder), spinach, and protein powder* and blend until smooth. Pour green layer in with the strawberry and banana layers into bowl or glass. Swirling if desired, layering, or section off as desired. If not serving right away store in the freezer and remove 15 minutes prior to eating. Top with Lucky Charms right before eating. Enjoy!
