Now that spring is here fresh flavorful smoothie bowls and chia bowls are my thing. They are one of my favorites year round but when the weather warms up and all the fresh fruits come out I make them daily, if not multiple times a day! Not only are they so delicious they are beautiful, even if a beautiful mess as I call some of the ones I post on Instagram, but they are packed full of nutrients! Chia seeds are packed with omega 3, fiber, minerals, and antioxidants. Not to mention they have so many uses. I was hooked on them the first time I tried them years ago and my oldest daughter is hooked on them lately so we go through a lot of them! Chia bowls, like my smoothie bowls, are easy to customize to your needs adding protein when you need it and stirring in additional supplements like maca powder, sprulina, ect and or topping with hemp seeds, flax, ect. The options are pretty much endless! This one is one of my favorites, with fresh raspberries and mangos out now this chia bowl is a no brainer. Mangos and raspberries (as well as strawberries and blueberries) are one of my favorite flavor combos for smoothies not only because they taste good together but I can’t get over the bright, beautiful, color combo! I dare you to try this Raspberry Mango Chia Bowl and see how amazing your day goes! Yep like a kid maybe I even double dog dare you, because I have yet to have a bad day when I start the day with this bowl.

Raspberry Mango Chia Bowl
Makes 1 serving
1/4c chia seeds
1c coconut milk, plus more as needed if adding optional protein (used So Delicious Unsweetened Coconut Milk)
1c raspberries
1/2 tsp cinnamon,
stevia to taste
1/2-1 fresh mango, diced
1 scoop vanilla or coconut protein, optional (Vega Vanilla Protein & Greens, Viva Vanilla Protein Smoothie, and Coconut Almond Vega One are my favorites in this bowl)
The night before blend coconut milk and 1/2 cup of the raspberries together. I usually use frozen organic raspberries for this as they are usually cheaper (topping with fresh raspberries) and blend in my Vitamix until smoothie. In a jar or bowl mix together raspberry coconut milk mix, chia seeds, and cinnamon. Place in the refrigerator overnight. In the morning add stevia to taste and if adding protein powder stir in with additional milk if needed. Layer with fresh mango and top with raspberries and mango. Enjoy!

Yum, this sounds delicious! I love mango and raspberries together. I’m a fan of chia seeds in my overnight oats but I haven’t tried a chia bowl without the oats.

Thank you! You could also do this with oats, we change things up doing both. It is pretty much the same but more like tapioca pudding or a thick pudding. It would just depend on how much chia you usually use in your overnight oats on how big of a difference the texture would be.
