Spicy Peanut Butter Egg Salad Sandwich

 

One time of year I make egg salad sandwiches, after Easter to use up eggs we colored. Since I am not a fan of mayo or like spreads I usually would make mine with yogurt, as posted last year here. If you follow my blog you will know I like, umm love, nut butter. Being on an even bigger nut butter kick I decided to spice things up and make an egg salad using peanut butter! Not just any peanut butter though, spicy peanut butter, Peanut Butter & Co The Heat Is On! This peanut butter makes an amazing pad thai and is great when wanting to add a little spice and it made this sandwich delicious! So add eggs to the long list of things that go great with peanut butter! Will have to keep looking if you are still on the hunt, like me, to find something that peanut butter doesn’t go well with.

 

Spicy Peanut Butter Egg Salad Sandwich

Makes 1 sandwich, could be made into 2 sandwiches with less filling by adding 2 slices of bread

2 slices of bread (used Food For Life Ezekiel 4:9 Whole Grain Sprouted Bread)

1 TBSP Peanut Butter & Co The Heat Is On Peanut Butter

3 TBSP plain greek yogurt (used So Delicious Dairy Plain Coconut Milk Yogurt)

2 hard-boiled eggs, peeled

handful of arugula or greens of choice, optional

 

In a small bowl mix together peanut butter and yogurt. Cut eggs in half and remove yolks, mash yolks in with the peanut butter and yogurt. Chop up egg whites and fold into the mixture. Place greens, if using, on slice of bread and top with egg salad, top with remaining slice of bread, Enjoy!
