Summer is in full swing and fresh fruits and berries are at their peak! Couldn’t think of a better granola recipe for the month than Summer Berry Granola. Plus blueberries and strawberries paired with coconut and almonds make a very patriotic granola perfect to pack for whatever you have planned this 4th of July. Of course after our first batch (which went before I could photograph it!) we couldn’t keep it to just strawberries and blueberries the girls had to add tart cherries to theirs and I added cherries, mulberries, and goji berries to mine. You can never have too many berries, right? You can use freeze-dried or chewier dried fruits for this, we mixed it up and used some of both. You can also add in any extra berries as desired such as dried cherries, mulberries, raspberries, and or goji berries!

Summer Berry Granola (base recipe)

Makes about 6-7 cups

3 c oats, gluten-free

1/2 c sliced or chopped almonds

2 TBSP ground flax-seed

pinch of sea salt

1/2-1 tsp ground cinnamon

2 TBSP coconut palm sugar (Navitas Naturals)

1/4 c raw agave, or honey (honey for non-vegan)

2 TBSP coconut oil, melted

2 TBSP unsweetened applesauce, room temp or warmed if cold

1/3 c almond butter, or nut/seed butter of choice (used Kolat Blueberry Walnut Super Food Fushion Fruit and Nut Butter)

1 tsp pure vanilla extract

1/4- 1/2 c dried strawberries*

1/4- 1/2 c dried blueberries*

1/4- 1/3 c coconut flakes, optional

 

Optional add ins of choice such as pumpkin seeds, goji berries, other dried fruit, nuts*

 

*Adjust quantities based on any optional additions, if not adding additional add more blueberries and strawberries. If adding many add in as one of our batches lower the amount. It is all personal preference.

Super Summer Berry Granola

(7 cups)

Kolat Superfood Fruit and Nut Butter, Blueberry Walnut

1/2 tsp cinnamon

1/2 c freeze-dried strawberries

1/3 c dried blueberries

1/4 c dried mulberries (Navitas Naturals)

1/4 c dried goji berries

1/4 c dried cherries

Simply Sweet Summer Berry Granola

(6-7)

Nuttzo nut butter

1 tsp cinnamon

1/2 c strawberries, freeze-dried

1/3 dried blueberries

1/4 dried cherries

1/4 c finely shredded coconut

 

Preheat oven to 325 degrees. Line large baking sheet with parchment paper. In a large bowl mix together oats, almonds, cinnamon, salt, and flax-seed. In medium mixing bowl mix together melted coconut oil, agave/honey, coconut palm sugar, apple sauce, nut butter, and vanilla. Add wet ingredients into the dry and mix together with rubber spatula until evenly coated. Sprinkle with coconut flakes (not finely shredded it will burn) if you want it toasted. We like to add in the berries after to keep the texture.  Spread on prepared baking sheet. Bake 20-25 minutes, stirring half-way. Remove from the oven and stir in berries, coconut if you haven’t added, and any other ingredients you want to add.  Store in airtight container, and enjoy within 7 days for best taste. Enjoy!
