What do you do when you can’t decide between a blueberry smoothie and a watermelon refresher? Make both and put them together! Together they make a beautiful delicious combo. Depending on when I am making this I will add protein to the blueberry smoothie. It was good both way. The only advise I have is test your watermelon! I went to make this again, cut up an extra watermelon and put it in the freezer, whipped this up and it didn’t taste very good. I couldn’t figure it out as I had made it a couple of times before. I tasted a piece of the watermelon and found my problem, lesson learned.

 

Watermelon Blueberry Coconut Smoothie

Makes 2 servings

3 c frozen watermelon chunks

1 c frozen blueberries

2 c coconut milk (used So Delicious Unsweetened Vanilla Coconut Milk)

1-2 scoops vanilla protein smoothie, optional (used Vega Viva Vanilla Protein Smoothie)

10-12 ounces coconut water (used Harmless Harvest)

 

In a Vitamix, or high-speed blender, blend together coconut milk, blueberries, and optional protein powder if using. Divide smoothie between two large glasses. Rinse Vitamix and blend watermelon and coconut water until smooth. Pour on top of the blueberry smoothie. Enjoy!
