Muffin Monday calls for 3 Ingredient Mini Blueberry Muffins! The pandemic has changed so many things, obviously, and so many things I didn’t realize it would or tried not to let it. Especially the longer it goes on. Instead of focusing on so many things that we’ve lost, lost out on, can’t do, I’m trying to stay positive. Some days it’s easier said than done. I use to love to go grocery shopping and get inspired but ordering groceries isn’t the same, especially went things don’t come or won’t work for what I had planned. Now I really need to go but often put it off or give up on ordering and it takes 2-3 days to finally place my order.
Cherishing the simple things and traditions we are still able to keep we were still able to pick blueberries this year, twice! Picking berries has always been one of my favorite summertime activities and blueberries even more so the last couple years as when I go now all the emotions come flooding back to two years ago when we went blueberry picking the day after finding out I was pregnant with Baby G. I wasn’t feeling well and was so emotional, and then there were all the blueberry pancakes that were one of the only things I was able to eat in the early weeks.
We snack on all the berries, 2 giant buckets of them, and have made lots of pancakes. I even made jam but then I decided I wanted to attempted to make sourdough blueberry fritters one morning. It wasn’t as simple as tweaking my sourdough apple fritters and no matter what I did it wasn’t working. At a loss and trying to figure out what I would make, maybe muffins again but we were out of lots staples. It’s not often we run out of staples and when it happens now I don’t want to just run out to the store.
Rummaging through the cupboards I saw cake mixes, I had a lot of box mixes as back-up when I was making Baby G’s 1st birthday cake back in March that I never ended up using. Then I remembered all the 2 ingredient cake recipes I’ve made in the past and got an idea! We also had applesauce so why not whip up some blueberry muffins?! Of course everything is cuter when it’s small so I decided to make mini muffins.
Not as healthy as the usual mini muffins I make but these only take 3 ingredient, hence the name 3 Ingredient Mini Blueberry Muffins, but the kids LOVED them!
I guess they taste like the little package mini muffins. Who knew. Kids love them and we can use up stuff we have on hand and not waste it. Also so easy the girls can just whip some up for themselves, or friends we were able to really have sleepovers again.
Also a great recipe for kids to make, maybe needing a little help with the oven depending on age, and gives them something to do right now as I know there are many that are in a rut with food and having “I’m bored syndrome”, haha.
All you need is 1 box of white cake mix, or you can sub yellow cake mix if that is what you have, 2 cups of apple sauce, and 1 cup of blueberries. Pretty simple. There are even box cake mixes that are vegan, for vanilla I’m pretty sure it’s just a Berry Crocker Vanilla. I haven’t tested this recipe with any gluten free cake mixes or paleo, if you try it before I’m able to please let me know how it goes.
If you’re thinking wait cake mix, so aren’t these cupcakes? Nope, no frosting so I’m calling them muffins. 😉 I always thought muffins were less sweet than cupcakes and didn’t have frosting but I’ve had some sweet muffins in my day and some really moist ones like cake.

mini muffins (40-48 mini muffins)

- 1 box white cake mix can sub yellow cake mix
- 2 c apple sauce
- 1 c blueberries
Ingredients

- Preheat oven to 350F.
- In a large bowl mix apple sauce and cake mix together.
- Fold in blueberries.
- Grease/ spray mini muffin tins with non stick spray, or you can use paper liners.
- Spoon, or use a mini scoop, the batter into tins.
- Bake for 16-18 minutes.
- Remove and let cool in the tin for 10 minutes so they can set before removing.
- After removing let cool completely on a wire rack.
- Enjoy!
Some box cake mixes are vegan, there is at least one white/vanilla that I know of. I haven't tested this recipe with any gluten free cake mixes or paleo, if you try it before I'm able to please let me know how it goes.
