Homemade Chinese nights is one of our favorites, right up there with homemade pizza night. I would say Mexican too but we have that often and can do that during the week. Where as we save Chinese and pizza for Friday and Saturday nights as they can be more time consuming, only because we usually go all out and get a little crazy. We make fried rice, wantons, and egg rolls from scratch. The girls now help out making the wantons since they are their favorite. So much so that when grandma was staying with them they had Wanton Wednesday, yeah so not going to be a weekly thing, sorry girls. They also have a code word calling them Not Nows, Wantons spelt backwards, with grandma since it’s their “thing”.
So I got this crazy idea to make Kimchi Fried Wild Rice, so I declared Friday night to be Chinese night! The girls weren’t as excited about my idea. Well they were about the Chinese and cream cheese wantons but not my fried rice. However I also made a marinated pork (Chili Garlic Sauce, Braggs Aminos, and honey) that I in the cast iron skillet and finished in the oven that just fell apart to put in some of the egg rolls and on top of the fried rice for those who wanted it and it was declared “The Best Chinese Night Ever”! The girls said “you have to blog this” and well who am I to argue I just have to share it! This gluten free fried rice is a must make and easily adaptable, as is without eggs it is vegan, add in eggs and or protein if desired.
Kimchi Fried Wild Rice
Makes 4 servings
1c wild rice blend (Lundberg Wild Rice Blend)
1/2c chopped green onion
1c shredded carrots
1c sweet peas
2 TBSP liquid aminos (Braggs)
2 TBSP sesame oil
1 clove garlic
1 tsp grated gingerroot
1/2-1c kimchi, plus more for topping (Farmhouse Culture Spicy Wakame Ginger Kimchi)
2 eggs, optional
Cook rice according to package instructions and chill in the refrigerator for at least 2 hours. In a wok or large skillet heat oil over medium heat. Grate in garlic clove, add ginger, green onion, and cooled rice. Saute for 2-3 minutes. If adding egg make a well in the middle, pushing the rice to the sides of the pan. Crack eggs and scramble. Once scrambled mix with rice. Add in peas, carrots, and aminos. Once mixture is hot add in kimchi. Serve topping with additional kimchi as desired. Enjoy!
