Sweet and salty craving strikes again! The girls wanted ice cream sundaes, I think maybe because we just got some dairy free chocolate syrup for S. I couldn’t remember the last time we had madeย ice cream sundaes, probably last summer so I figured why not. No I’m not a bad mom we’ve had plenty of ice cream, ask anyone we know there is never a shortage but usually as is not as a sundae. If you count our froyo dates to Yogurt Lab as a sundae well then we have them often. I wasn’t feeling anything really, thinking chocolate and bananas, or chocolate and peanut butter, but really didn’t want chocolate. Debated my favorite Salted Caramel Cluster but of course that wasn’t a sundae. Could add coffee but it hit me yes my Elvis combo yet again, I just can’t get enough! As I was eating it I thought hmm coconut bacon well since there is “bacon” can I eat this sundae for breakfast? You know there is banana, and peanut butter which I would normally have for breakfast. Kidding, well kind of, maybe, but won’t say I would never do it. I had to share this combo because I was also loving the peanut butter “magic shell” like topping. I had planned to do another version of this but was waiting for something that has been out of stock and then decided to go with this version because it was a simpler version of a banana split. Banana splits seem to scream summer but when I thought about them they always seem so big in over the top. So I I kind of did this one banana split style but with the smallest regular bananas I could find. As I sit here I realize I have so many Elvis combo recipes in que to post, oops umm well maybe it’s time to start thinking summer flavors, like S’mores! Haha!
Elvis Banana Sundae
Makes 1 serving
1 small banana (smallest I could find that wasn’t the mini)
2 scoops vanilla ice cream (So Delicious Very Vanilla Cashew Milk Ice Cream)
1/2 TBSP coconut oil, melted
1- 1 1/2 TBSP peanut butter (Peanut Butter & Co Smooth Operator)
1 TBSP honey/bee free honey or light agave, optional
1-2 TBSP coconut bacon (Organic Matters Coconut Bacon)
Peel banana, slice lengthwise, and place in a dish. Scoop out ice cream and put it between banana slices. In a small bowl mix warm coconut oil with 1 tablespoon of peanut butter adding in a little more as needed. Pour peanut butter mixture over top of the ice cream. Drizzle with optional honey/agave if desired and sprinkle with coconut bacon. Spoon in and enjoy!
