I told myself I wasn’t going to do it. I wasn’t going to make another shake today for the National Food Holiday. Then it happened after my workout I went to make my shake and all I could smell was lemon. The lemons were calling my name! I had to, but I couldn’t, but I did. This Lemon Chiffon Protein Shake is light and fresh and hit the spot.
Lemon Chiffon Protein Shake
makes 1
1c coconut milk (used Silk Vanilla Coconut Milk)
zest from one large organic lemon
1 large organic lemon with the peel removed (used the same one I zested and then removed the peel)
1 scoop vanilla protein powder (used Vega One French Vanilla)
glass of ice
Put everything in a blender (used Vitamix, if not using a high speed blender you may just want to use juice from lemon and not the full lemon or you may have some pulp) and blend until smooth. Top with additional, optional, lemon zest. Enjoy!
