It really was only a matter of time before I went here, I’m sure you knew that if you are a regular reader. I just can’t break my craving for the Elvis aka peanut butter, banana, bacon, honey combo. This isn’t a dessert pizza either, it’s a pizza. Just like you can have veggies, cheese, ect on your sandwich or you can have a peanut butter and jelly. Either way it’s still lunch. It was pizza night and I was craving that chewy Neapolitan crust but really not pizza, or traditional pizza if you can call any of mine that. I poked around the cupboards, fridge, just not feeling anything other than peanut butter. So I went with it and fail! Yes fail how could I fail on something that was far from new to me? We make the pizzas almost every weekend, sometimes more. I used the same peanut butter, bananas (well of course not the exact same bunch), coconut bacon, and honey so what went wrong? Well I tried to cook the pizza with the peanut butter and it got too dry, the coconut bacon well that browned a little too much. So on to the next weekend and I made sure we had a little extra dough this time and nailed it! Cook the crust with coconut oil, can’t skip that or your crust will puff up and look like a UFO that’s hollow on the inside. Stop just when it starts to brown but isn’t too cooked yet, top with melted peanut butter so it’s quick and easy to spread, add bananas and cook another 1-2 minutes. Sprinkle with coconut bacon and drizzle with honey and ahhhhhhhh yes it was that dang good that I may have tried to sing as I savored that first bite. A little messy if you cut right into it but all that warm drippy peanut butter you can dip your crust into. Salty and sweet it was just what I wanted and now I’m not sure I can go back to a sandwich after having that chewy crust, unless of course it’s camping or in the car where I don’t have the option to make this pizza.
So I can’t be the only one that loves the Elvis combo, right? It got me thinking though what other cravings people might have that they try to spin and eat in different ways like I do with this combo.
When Pigs Fly Pizza (vegan)
Makes 1, 10-12″ pizza
1 10-12″ crust (we use our homemade Neapolitan Crust, recipe can be found here)
1/2-1 TBSP coconut oil
1/4c peanut butter (Peanut Butter & Co Smooth Operator)
1 large banana
1/3c bacon (Organic Matters Coconut Bacon)
drizzle honey or agave
Heat grill, with pizza stone placed inside, to 550F if using my husbandβs crust recipe otherwise heat per your pizza crust directions. Melt coconut oil and brush on pizza crust. Place pizza cust, keeping it on the parchment as it will easily slide on and off your pizza stone, onto the pizza stone. Check at 5 minutes but depending on the heat you are able to maintain it may take up to 8 minutes, the crust should start to be golden brown a this point pull the pizza off. Heat your peanut butter in the microwave for about 30 seconds so it is easy to spread on your crust. Spread peanut butter on crust and top with sliced banana. Place back in the grill and cook for 1-2 minutes just when peanut butter to warm but remove before peanut butter starts looking really dry (this is the reason the peanut butter can’t be placed on before baking the crust). If using your own crust bake per your crusts instructions, pulling off a little early to top with peanut butter as stated above. Remove pizza, sliding a baking sheet under the parchment paper. Sprinkle with bacon and drizzle with honey (agave, maple syrup, or bee free honey). Enjoy!

Haha! It’s the classic Elvis combo pb, banana, bacon, and honey. When we had people over and I was making it once it was something about putting real bacon on it and I replied when pigs fly and so I decided to name it that.
