Schools back in session but summer isn’t officially over, and ice cream doesn’t really have a season in our house. I had planned on sharing this a couple weeks ago after the girls first made it but they just couldn’t wait to eat it and as you may have seen on Instagram they had to eat it before I could get pictures. I don’t blame them it was good! So if you are one to eat dairy free and or vegan ice cream there you already know there aren’t as many flavors as traditional dairy ice cream. Certainly not a whole case of fun flavors like Ben & Jerry’s has. Well that, and not having an ice cream machine, isn’t going to stop us! This is so easy that kids can make it, and they can even make it after school and enjoy it a couple hours later it’s that quick and simple! So as you already know from the title the girls picked one of their favorite flavors, S’more! If you’re a regular readier you probably aren’t surprised. Really if you aren’t excited and drooling already, the girls decided to make not one but two versions!! Oh but wait there’s more, they wanted the full s’mores flavor effect so we roasted the marshmallows before adding them. This is the part that I had to help with. I bet you’re drooling now. So how quick and easy is this? Well all you need is a pint of your favorite dairy free chocolate or vanilla ice cream (or yes you know we used our favorite So Delicious Cashew Milk Ice Cream), graham crackers (if your also gluten free you can use your favorite store bought, or make my Camp Crackers that are vegan and gluten free, we like to keep these on hand in the freezer), marshmallows, and optional chocolate chips!
So I will warn you this opened up a whole world of options and lists of flavors the girls want to make, because really it’s so easy! The funny thing was I wanted and planned for over 6 months to get an ice cream machine and or use the Vitamix to make an Elvis flavored ice cream (yeah I’m sure you knew that was coming). Instead I gave in and just made an Elvis Sundae, of course now I might have to make a version like this but I have my visions set on something much bigger! Oh yes so much bigger and I cannot wait!
S’more Ice Cream
Makes 4 servings, really in our house it’s more like 2
1 pint chocolate or vanilla ice cream (So Delicious Very Vanilla Cashew Milk Ice Cream, So Delicious Creamy Chocolate Cashew Milk Ice Cream)
1c marshmallows (Dandie’s Vegan Marshmallows)
1/2-3/4c broken graham crackers, crushed but not crumbs and some bigger pieces (about 3 regular sized graham cracker sheets)
1/4c chocolate chips, optional (Enjoy Life Foods Mini Chocolate Chips)
Preheat oven to 400F and line a rimmed baking sheet with a Silpat Mat or parchment paper and spread marshmallows out on the pan. Pull ice cream out and let sit on the counter to soften while roasting the marshmallows. Roast marshmallows in the oven for about 10 minutes, watching carefully and remove them when they puff up and get golden brown. Let marshmallows cool, if you are in a hurry you can place the sheet in the freezer. The marshmallows will deflate and get flat and hard/crunchy, don’t worry this should happen and you will not have crunchy marshmallows in your ice cream they will soften and “melt” into the ice cream. If they melted together also don’t worry. In a large mixing bowl using a hand mixer mix the softened ice cream together. This will make it all smooth and consistent, making your additions even. Dump in the marshmallows and blend until just broken up and mixed in. Add grahams and optional chocolate chips if using and again blend just until blended, not over blending, you could also fold these in with a spatula. Pour mixture into a non stick or glass standard 9×5 bread pan. Place mixture in the freezer to set, or at least 2 hours, depending on your freezer. When ready remove the bread pan, if it’s been in there 6 hours or overnight you may want to wait 5 minutes before scooping, it will be like a normal pint of ice cream vs more of a soft serve. We like to leave ours in there until fully set. Scoop into your favorite dish or cone and enjoy!
