Originally posted a year ago I was thinking about this recipe the other day and realized that National Strawberries and Cream Day was today so I ran to the store to make sure I had a bottle of Cashew Bliss to make it this morning knowing things would be crazy just in case I couldn’t make homemade Vanilla Cinnamon Almond Cashew Milk. Not that it’s hard but because with everything going on I could see soaking the nuts and forgetting about them.
I’ve never reposted a recipe, although I have many old favorites that I’ve been planning on re-photographing for far too long. After 7 soccer games in the last week, so many hours in the car, A’s gymnastics, family here, I sat down to finish my post for today this weekend and was just exhausted. Since I never miss a Monday with Meatless Monday I found myself torn but since I was already planning to remake this recipe and it was on my mind I decided to share it again today.
Things don’t always go as planned and I’ve been trying to work hard the last year to just go with the flow. I find myself being more ok now with letting things like laundry and dishes go. Where as before I could never leave dishes in the sink. The one thing I’m still hard on is myself and trying to fit it all in and pushing myself past my limits. It’s been a long hard couple weeks and I’m struggling with busy life to try to keep up after my grandmother’s passing, the event, and everything I had a couple weeks ago with this past weeks schedule and all that is going on with the girls final weeks of school. Trying not to miss real life moments but putting unrealistic expectations on myself to catch up and keep up.
Times like these I need my simple, delicious, healthy recipes and even more reminding myself that life doesn’t need to be perfect or look pretty to be good.

You can’t beat simple, healthy, and delicious and this Strawberries and Cream Chia Pudding Parfait is all three! It would also be something mom might love for Mother’s Day that kids can make themselves, little kids only needing help to chop the strawberries. You could also just use fresh raspberries that don’t require cutting. Of course it’s perfect for any day if you ask me. Chia pudding makes a delicious breakfast, snack, dessert and is easy to make ahead for a grab and go option. My oldest daughter and I are the big chia pudding lovers in the family.
Sometimes simple flavors just hit the spot so with this 3 ingredient chia pudding I like to use a cold pressed vanilla almond or cashew milk that can be purchased at a local juice shop or grocery store (my local favorite is Juice So Good Cashew Bliss) or homemade Vanilla Cinnamon Almond Cashew Milk. You just want to use a rich, thick, creamy milk for a really indulging texture. If you want something with protein or something a little different check out my other chia pudding recipes.
Still haven’t tried chia pudding? If a simple recipe like this one doesn’t have you jumping up to try it. Maybe this will. Chia seeds, will keep you full it’s a high in fiber and a rich source of B vitamins, vitamin C, vitamin E and the essential minerals iron, selenium, sodium, calcium, magnesium and phosphorus. Chia Seeds are loaded with omega fats, protein, antioxidants and fiber. They are a great source of healthy essential fatty acids, eight times more than salmon! They’re also one of the most digestible plant proteins. In case I forgot to mention it’s delicious too!

- 1 c thick vanilla non dairy milk** (homemade Vanilla Cinnamon Almond Cashew Milk)
- 3 TBSP white chia seeds (Salba White Chia Seeds)
- 1 c strawberries, or berries of choice
Ingredients

- In a jar mix together chia seeds and milk. Cover and refrigerate at least 2-3 hours or overnight.
- Remove steams and chop strawberries.
- Layer chia pudding and berries cup(s). For a grab and go option just top pudding with berries.
- Enjoy!
Use a thicker vanilla nut milk for creamiest texture. You can also use a coconut milk beverage and coconut cream. If using unsweetened milk add vanilla, sweetener, and cinnamon to taste. Homemade recipe linked above or also a great recipe to use a nut based or coconut milk from your favorite juice shop (Juice So Good Cashew Bliss).
