Happy Monday! I’m so pumped for this week and if I was home this morning I’d be making this Let The Beet Drop Smoothie bowl for breakfast to start the week. Instead since we’re headed back home today I’ll be having it this afternoon. I’m so pumped because I’m pretty excited about a concert I’m headed to this coming weekend and I’ve even gone a little quirky and crazy and created some fun smoothie bowls to fuel me this week.
If you know me or are a regular reader you know I love my beets and beet puns so of this Let The Beet Drop Smoothie Bowl was a no brainer. The hardest thing was coming up with a name because I had 4 options, sorry Mr. Whisk I’m not going with Beets By Miss Whisk or S’s suggestion of Beets By MW. I mean even though I get a little crazy in the kitchen from time to time and sign into my whisk or other kitchen utensils I’ve got no singing skills, let along rapping skillz. I do have some smoothie skills though so I’ll stick to those.
This fun smoothie bowl is packed with nutrition and beets! Oh and bananas, yep beets and bananas, this smoothie combo is bananas B-a-n-a-n-a-s! Haha yep I probably just dated myself a little too. It’s all about that fun healthy happy balance and eating healthy smoothie bowls makes my happy, especially when they’re fun. So the details and nutrition breakdown if you are interested, if not feel free to skip down to the recipe and whip this baby up!
Beets are rich in vitamin C and they are packed with fiber. They are also a source of phytonutrients called betalains. Betanin and vulgaxanthin are the two best-studied betalains from beets, and both have been shown to provide antioxidant, anti-inflammatory, and detoxification support.ย Bananas are a great source of potassium, magnesium, and vitamin B. Their mix of vitamins, minerals, and low glycemic carbohydrates (this is something I was surprised by the first time I heard it) in bananas make them a favorite food pre workout for endurance. I like to use coconut milk to add healthy fats and it’s probably my favorite non dairy milk to use in smoothies, unless using homemade or a thicker cold pressed cashew or almond milk. I used Navitas Organics new Cacao & Greens Protein, and a new and already favorite Focus Superfood Boost. You can use any protein powder I go between the new Navitas and my Vega (still like that the Sport has BCAA’s and more protein for times I need it) since I have so much of that I like having the option to mix things up. I’m really loving the texture and taste of the Navitas Greens & Protein as they are packed with complete proteins, digestive support, antioxidants, and 15 superfoods. Great option for every day. It also contains no added sugar, additives, fillers, artificial sweeteners or flavors.
The Daily Superfood Focus Boost is optional but as I said already a favorite and Iโll tell you why, not sponsored as I have said many times when I find a product I love I canโt help but share it with you! I am a Navitas Insider so I do get a discount on orders placed online but honestly I usually end up getting them at my local Whole Foods or like the Focus Boost I order it on Amazon Prime. So why do I love the boost? It has so many of my favorite superfoods in 1 container! Funny too since I have a couple bags of Navitas gelatinized maca powder and I had just ordered two jars of Moon Juice Ashwagana before trying this and falling in love. Just a few of my favorites packed in here, maca, matcha, yerba mate, mushroom blend (including reishi which I’ve been loving even more lately) and ashwagandha! The list goes on with acai, mauqi, lucuma, ect. The boost is optional if you use any superfoods or adaptogens regularly you can add the ones you like or see fit to this bowl.
The topping options are open but I geeked out a little and went with coconut butter (homemade, just blend unsweetened shredded coconut in a Vitamix until it’s nice and creamy) and cacao nibs thinking I could get it to look like a record or something, not sure what but in my head it worked and my taste buds agreed!
What are you enjoying on this Meatless Monday? My co-host Deborah and I would love to have you link up and show us what you’ve got going on in your kitchen. Or just comment below and hopefully some of the other recipe creations below inspire you.

Beets go so well with chocolate or berries, both are favorite pairings in beet smoothies.

I love beets and I love beets in smoothies! Coconut butter and cacao, this is perfect. Every day is meatless Monday for me, haha.

Such a great combo and why not pack in more veggies! Oh I know the feeling it was for me for so many years.
Laura @ Sprint 2 the Table
I always put beets in my protein smoothies! But most of the time I used CocoCardio rather than an actual beet. Now that we have a house in A/C, I can turn on the oven and start roasting again though!
I love that you’re as weird as I am adding veggies to stuff. ๐
awhiskandtwowands
Yeah for roasted beets! I roast big batches or when I buy pre cooked Love Beets in bulk at Costco sometimes things come up and if I won’t be able to lose them I freeze them.
I knew we had similar tastes since the “Strange But Good” days! ๐

This smoothie bowl sounds amazing! I wish beets weren’t giving me such a hard time lately. Everytime I have them I get a crazy blood sugar spike and feel almost drunk followed by fatigue the rest of the day. I’m hoping it passes soon ๐ I’m wondering if I could use beet root powder and get the same color and flavor without all the sugar?? I might investigate that
awhiskandtwowands
Sorry to hear your body isn’t loving beets lately. I’m sure you could use powder but you’d have to add something to thicken it as well. Let me know if you come up with something.
