Happy Monday! Yes it’s a happy one here because we’re starting it off with a S’more Overnight Oats for breakfast! What better way then to start the day with a quick breakfast that includes chocolate? You’ve just woken up from a great nights sleep on your memory foam mattress and now your breakfast is ready and waiting for you. Call it an oatmeal smoothie or overnight oats, I think it should be called a SmOAThie but my girls don’t agree. Not thick enough to be overnight oats, not cold and frozen enough to be a smoothie bowl, it’s more like a very creamy pudding like bowl of oatmeal that yes we make the night before so I guess technically they are probably overnight oats.
Summer is almost over, I know despite seeing everything pumpkin all over the place it is still technically summer. Don’t get me wrong I like pumpkin and for whatever reason the fall bug hadn’t bitten me yet this year (usually hits sometime in August when we get a couple cooler days in a row) but last week when it was cold it hit hard but before I could adjust it and warm up to the chilly temps things changed and the humidity and summer temps rolled back in. If you are like us having trouble adjusting to this uncertain time of the year where it’s hot and cold this breakfast might be for you too. Not only is it delicious and a great grab and go breakfast it can be enjoyed hot or cold, and you can decide in the morning when you wake up. Before the days of our homemade sourdough bread and toast for breakfast it would be smoothie bowls for warmer days, oatmeal on the chilly mornings, and soaked muesli in between since it’s another favorite. Although with later barre classes I’ve been doing muesli for a 2nd breakfast or lunch later in the morning and a smoothie bowl in the afternoon if I didn’t have one in the morning on earlier barre class days.
Since I first made these S’more Overnight Oats for the girls, ok I made myself some too, I make them without protein powder. Instead I made them with Ripple Plantbased Protein Milk. They could also be made with another non dairy protein milk this is just one that is always in our fridge. It helps make these overnight oats thick and creamy and the girls full and fueled until lunch, which is really late this year and has been a big adjustment. They can be made with other milk but they have the best texture when made with a thicker milk like Ripple, homemade nut milk, or a thicker coconut milk. See notes for suggestions and substitutions. Other then that they are quick and easy to make with cacao (for chocolatey flavor and antioxidants), sweeter of choice to taste (will depend on personal preference and milk used), rolled oats, and some fun toppings! Yes chocolate chips, graham cracker pieces, and marshmallows for breakfast! Just a few never hurt anyone and this mom approves for a few reasons. While I get the dessert after dinner idea over the years I’ve thought about it and if you’re going to have sweets wouldn’t it make sense to have them in the morning and then having all day to use the sugar, carbs, whatever vs just before going to sleep? Everything in moderation. This week we need to start it off on a good note and I need major mom points and good vibes to get to Friday. How many days left until Friday? Is it Friday yet?
There is really no reason needed to make these S’more Overnight Oats but trust me a day started with a simple and easy breakfast, did I mention delicious, breakfast like this is going to be a great day.

- 3/4 c non dairy milk of choice* (Ripple Vanilla Plantbased Protein Milk)
- 2 TBSP cacao powder (Navitas Organics)
- sweetener of choice, to taste
- 1/3 c rolled oats
- 2 TBSP mini marshmallows (Dandies Mini Marshmallows)
- 1/2-1 graham cracker (rectangle), crumbled into small pieces
- 1 TBSP mini chocolate chips Enjoy Life Mini Chocolate Chips

- Blend milk and cacao powder together in a Vitamix, blender. You can blend by hand or shake in a mason jar but it is harder to get it clump free.
- Add sweetener of choice to taste as needed, this will depend on personal taste as well as milk used.
- Pour into a mason jar and stir in oats and marshmallows.
- Let sit overnight or for a minimum of 4 hours, if possible for at least 8 hours.
- At this point there are a few options.
- Stir and if taking on the go you can top with graham cracker crumbs and chocolate. If you want to keep the crunchy graham cracker texture keep in a separate container instead and top just before eating. You can either enjoy it cold or heat in the microwave for about 1-2 minutes to enjoy warm.
- If enjoying at home stir and top with graham crackers and chocolate or heat for 1-2 minutes until desired temp and top with graham crackers and chocolate.
- Enjoy!
Try to pick a thicker milk for the best texture. For this non protein powder based recipe we've had the best luck with Ripple Plantbased Protein Milk, homemade nut milks or cold pressed like Juice So Good Cashew Bliss, or a thicker coconut milk.
If you want them really thick or are using a lighter milk use a 1/2 cup rolled oats instead of 1/3 cup.
Shown heated up. The longer it sits the thicker it will be so best to let it sit overnight. Also if enjoying cold and not heating up if you layer with the toppings the graham crackers and marshmallows will soak up moisture and get soft and it will be thicker.
If not enjoying on the go you can also add a toasted marshmallow for fun on top as shown.
