Happy National Pineapple Upside-Down Day!
I made a Pineapple Upside-Down Energizing Smoothie but had also planned on making a “dessert” version. Tart cherries are suppose to improve sleep and the combination of carbohydrates and high levels of tryptophan in SaviSeed (sacha inchi) are a recipe for sweet dreams.* This Pineapple Upside-Down Dessert Shake is a great dessert before bed.
Pineapple Upside-Down Dessert Shake
makes 1
1/4c tart frozen cherries
1c fresh pineapple chunks
1 scoop Vega One French Vanilla
1c coconut milk (used So Delicious Unsweetened Vanilla Coconut Milk, only 45 calories!)
1c ice
Optional coconut cream, pineapple chunks, and cherry for garnish
In a blender or small food processor blend cherries until smooth, spoon into the bottom of a glass. In a Vitamix or high-speed blender blend pineapple chunks until almost smooth. Remove a couple of tablespoons of the blended pineapple and place on top of the cherries in the glass if you want the layered look or you can skip this step. Add coconut milk, Vega One, and one cup of ice to the blender with remaining pineapple and blend. Pour into glass, top with optional toppings (it is great without too!) and enjoy!
