When National Oatmeal Day falls on a Monday you celebrate with Caramel Apple Overnight Oats! I had actually planned on sharing this recipe a couple weeks ago but it got bumped to last week and then I found out today was National Oatmeal Day and Wednesday is National Caramel Apple Day so I took it as a sign to share the recipe this week.
Yes there really is a day for everything and we don’t celebrate them all but it is fun to check it out when you don’t know what you make for dinner, like last Saturday being National Potato Day and American Beer Day. The girls had friends over so A took it as a sign to have mashed potatoes and root beer, of course a veggie and other stuff too, for dinner. Also an excuse to sometimes whip up old favorites or special treats.
Oatmeal and soaked muesli are some of my favorite breakfast, especially this time of year. While I usually love a nice warm bowl of oatmeal and the process of cooking it on the stove I have a love for the ease of overnight oats. It wasn’t until a couple years ago I started warming overnight oats on cold mornings. Before that they were a grab and go and I would eat them cold mostly in the warmer months and stick with stove cooked in the cooler months.
With moody Mother Nature one year and waking up to cold temps when it was suppose to be warm I heated my oats up and it was one of those “Why didn’t I think of this sooner moments”.
As I’ve mentioned I’m all about apples this year and warm or cold these Caramel Apple Overnight Oats hit the spot any day I eat them. Any time too since lately I haven’t been hungry in the morning and they’ve been “lunch” after barre. Or if I split it in two an afternoon snack.
Perfect for a quick grab and go for those busy mornings or ones you just want a relaxing start to the day.
Easy to customize adding in protein powder, I just make mine with a plant-based protein milk. I almost always add chia seeds for bonus nutrition (hello omegas!) and they help keep you full. I try to stay away from the sweet caramels for these Overnight Oats but if I have leftover homemade caramel I do use it and it’s a real treat.
Otherwise I like to make a quick caramel with nut butter. There are a couple on the blog like a Lucuma Caramel and an almond butter one but for this one I used cashew butter, dates, and maple syrup.

Lately I make the oats and layer or put them together in the morning in case I want to warm them up. Which take 5 minutes in the morning but I cut the apple while the oats are warming and then layer in the caramel and apples for a warming makes my tummy happy start to the day.

- 1 Granny Smith apple, cored and chopped
- 1/2 c rolled oats
- 1 c dairy free milk
- 1 TBSP chia seeds
- pinch cinnamon
- 2 TBSP- 1/4c caramel sauce (Cashew Butter Caramel Sauce, recipe below)
- 5 Medjool dates, soaked hot water for 10 minutes
- 2-3 TBSP cashew butter
- 3 TBSP pure maple syrup
- 3 TBSP warm water
- 1 tsp vanilla
- pinch salt

- Drain and pit dates. Blend everything together until smooth. Store in the refrigerator for up to a week.
- Mix oats, milk, chia seeds, and cinnamon together.
- Place in the refrigerator overnight or for 6 hours.
- Heat oats for a couple of minutes if wanting to enjoy warm.
- Layer or top with chopped apples and caramel sauce.
- Enjoy!

You can always make regular stove top and top with raw or cooked apples and a drizzle of caramel sauce! 😉 I like the process of cooking oats on the stove but there is a special place for grab and go overnight oats and soaked muesli.

Really? You’ll have to try dates filled with nut butter (cashew butter is my fav in them) and for a real treat a piece of chocolate! I lived off dates and nut butter a few summers ago.
