A few weeks ago I shared a recipe that makes my mornings brighter and better, Morning Mocha Fudge, which goes perfectly with coffee. Today I’ve got another recipe on repeat Vanilla Cashew Bliss Bites! They’re my afternoon go-to lately and they pair perfectly with a matcha latte!
Even better if I get to enjoy them outside while taking a moment to soak up some vitamin D and fresh air. It doesn’t even need to be a quiet moment, as those are hard to come by as a mom. Although I’ll take my Vanilla Cashew Bliss Bites with a moment of silence, just 5 minutes, this weekend for Mother’s Day.
All you need is 3 ingredients, 15 minutes, a bowl and spoon. Does it really get any easier?
Cashew Butter- I love the flavor of cashew butter and it’s my go-to for these. I usually make my own as it’s so easy and can be made without adding other ingredients. Oh the memories of 10 years ago when I would go into Whole Foods and grind warm cashew butter to dip dates in. Luckily I can make my own at home now. You can sub almond or another butter if you’d like.
Pure Maple Syrup- I usually make them with maple syrup but you want to sub honey or agave.
Vanilla Protein Powder- I use Four Sigmatic Sweet Vanilla Plant-based Protein with Superfoods as it’s a staple and packed with superfoods, functional mushrooms, and adaptogens. Not it doesn’t taste like mushrooms! It helps elevate my wellness and gives me what I need to feel by best. I’ve made variations of these with other protein powders so I’ve also added the weight but all that I’ve used, at least 4 over the years, have worked with the same amount. If you want to add a little fun to these they’re also great with sprinkles and kind of taste like cake bites (depending on protein used). Hint, maybe Mother’s Day?

- 2/3 c cashew butter (homemade)
- 1/3 c pure maple syrup, or sub honey
- 1 c vanilla protein powder, about 85-89g (Four Sigmatic Sweet Vanilla Plant-Based Protein with Superfoods)
Ingredients

- Line a plate or rimmed baking sheet with parchment paper and set aside
- In a bowl mix cashew butter and maple syrup/honey together.
- Stir in protein powder until mixture comes together.
- Using a small ice cream scoop, or spoon, to scoop desired amount and roll into balls.
- Place on prepared parchment paper.
- Enjoy one right away if you cannot wait!
- Place in the freezer for about 15-20 minutes to set.
- Remove and place in an air tight container, or plastic bag, and store in the refrigerator until ready to enjoy.
- If packing to take on the go I usually store them in the freezer so they have more time to thaw and soften.
