I got a 22 Day Pineapple Chocolate Chip Wonder Energy Bar and I wasn’t sure about it because pineapple and chocolate honestly didn’t sound that appealing to me. I finally decided to try it one day and I was pleasantly surprised at how good it was! I used it as my inspiration to create this Pineapple Delight Breakfast Bowl.
Pineapple Delight Breakfast Bowl
Makes 1 serving
1/2c organic quinoa, cooked and cooled
1/4c quinoa flakes, barley flakes, or oats (or combination of totalling 1/4c, used quinoa and barley flakes)
1/2c fresh pineapple, diced
1 TBSP sliced almonds
1 TBSP chopped pecans
1 TBSP sweet cacao nibs (used Navitas Naturals Sweet Cacao Nibs) and/or Vega Maca Chocolate Bar, chopped
almond milk or coconut milk (optional, I used 1/3c unsweetened vanilla coconut milk)
Mix together quinoa (cold or warmed) and quinoa/barley flakes and or oats in a bowl. Add pineapple, almonds, pecans, cacao nibs and or maca chocolate. Serve with optional almond or coconut milk if desired. Enjoy!

Looks delicious! Can’t wait to try it. I’ve had the unhealthy version of pineapple dipped in dark chocolate (in those edible bouquets), and I love it. Yum!

Thank you! I honestly never thought of pineapple and chocolate before I had that bar and it is another one of my strange combo loves! I have had other fruits with chocolate but just not pineapple and thinking back I like oranges and chocolate so not sure why I never tried it before now. Let me know how you like it when you make it!
