On a recent grocery shopping trip my youngest found purple cauliflower and was so excited. We have had it before but it has been about a year as it isn’t always available. She picked her cauliflower and carried it around the store and up to the register. She was so excited she wanted to hold it in the car on the way home. When I asked her what she wanted to do with her cauliflower she wanted a salad and smoothie with it. A smoothie?!? Ok well I didn’t see that one coming. To start out I blended the cauliflower florets with almond milk to see what we were working with and let her pick out what else she wanted to put in it. She didn’t want protein powder in it this time. She wanted a banana to make it creamy, crunchy things, and cinnamon not mixed in but sprinkled on top. In the end it was a pretty purple color and delicious. I even decided to make one for myself, luckily she decided to share her purple cauliflower, but added protein.
Purple Cauli-Power Smoothie
Makes 1 serving
1 c almond milk, or non dairy milk of choice (used So Delicious Vanilla Almond Milk Plus)
1 c purple cauliflower florets, white cauliflower will also work
1 frozen banana
1 TBSP raw shelled hemp seeds, hemp hearts
1 c ice cubes (she wanted to add 5 ice cubes)
dash of cinnamon, optional
1 scoop protein powder, optional (I also made one for myself and added Vega Protein Smoothie, Viva Vanilla)
In a Vitamix, or high-speed blender, blend everything except cinnamon together until smooth. Pour into a glass and sprinkle with cinnamon. Enjoy!
As a Vega Recipe Ambassador I receive Vega products, which I used as an option in this recipe. I use Vega not because it is given to me but because it has been my plant-based protein of choice since before I started blogging and some recipes are made with Vega products I purchase. I only write about foods I love, my blog is an extension of my hobby to make fun healthy food creations for me and my family.

You’ve got quite the adventurous kiddo there! I love that she wanted to make a smoothie with the cauliflower, no way would I ever think to use it that way!

Oh yes she is the adventurous one! I thought she just wanted it for a snack and maybe we could add some to a salad. She wouldn’t let me touch it and the next day she asked me to make a smoothie and I cringed thinking ok this isn’t going to be good but I was plesantly surprised! It is pretty mild and like a banana smoothie basically without as much sugar, with more vitamins, and a beautiful color. I should have taped how excited she was telling her sister and wanting her to try one and her sisters reaction!

That would’ve been an awesome video!
