This weeks for MMAZ, Meatless Monday A-Z, the ingredient is raisins. Really this should be easy yet I wasn’t sure what to make. My youngest decided for me when I caught her dipping Peanut Butter Puffins Cereal into Peanut Butter and Co Cinnamon Raisin Peanut Butter! I of course had to test one and yep this was it! We tried to make the bars keeping the Puffins whole but they didn’t stand up to the lunch box test so we crushed them up and pressed them into bars. So what do you get when you mix Puffins with Peanut Butter & Co Cinnamon Raisin Swirl Peanut Butter you ask? An idea for a bar that tastes amazing! Once you try these you will agree, she has good taste!
Cinnamon Raisin PB Puffins Bars
Makes a 9×9 pan, 16 bars
11 ounce box (or 7.5 c) cinnamon or peanut butter Puffins Cereal, or honey rice or muligrain for gluten-free (used Peanut Butter Puffins)
1/2 c raw agave or honey
3/4 c Cinnamon Raisin Peanut Butter (used Peanut Butter & Co Cinnamon Raisin Swirl)
Whisk agave and peanut butter together. Place Puffins in a food processor and pour agave peanut butter mixture over the cereal and pulse until well combined and a coarse crumble that sticks together when you pinch it between your fingers. If you don’t have a food processor you can also smash the cereal in a large ziploc, this is fun for kids to do, and pour the agave peanut butter mixture over the crushed cereal in a large bowl and stir until combined. Line a 9×9 pan with parchment paper. Pour the mixture in the pan and press it down well. You really want to pack the mixture down. If you used a whole box of puffins you can take the bag apart at the seams and place the inside of the bag down and use it as you would parchment paper to press and smooth the bars down. Place bars in the refrigerator or freezer, until firm, and cut into bars. Enjoy! We store our cut bars in the freezer and pull them out and enjoy them cold or take them on the go.

Thank you! The Cinnamon Raisin Swirl does taste amazing, my youngest prefers that over chocolate most of the time if given a choice.
