The other day my oldest told me she doesn’t like avocado. While I know she doesn’t like it on tacos or in certain things there are a lot of things she likes that have avocado. My youngest use to eat avocado and guacamole by the spoonful but that hasn’t happened lately I think mostly because her sister says it is gross. We were sitting there one afternoon and both had asked for the last of some fresh orange juice a couple of times and I said there wasn’t enough for each of them I would put it in a smoothie. I grabbed an avocado to make some lunch and than realized they were getting ripe quicker than I thought and I was going to have to use them quick or freeze them. I decided to put the orange juice with the avocado and make a smoothie. Wouldn’t you know that smoothie didn’t stay in the glass more than 10 seconds, they both chugged them down. Funny how my oldest said it was the best smoothie and was wondering why she didn’t taste any greens, as it was green in color, and didn’t taste any bananas. She stared at me with this inquisitive look and said it was green and super creamy what was in it. Of course I told her, I would have told her had she asked before she even tried it had they not come up to the kitchen grabbed the glasses and started drinking them. She got this smirky smile on her face and giggled, “I guess I need to try things more often”. I said see you like avocado more than just those handful of ways and just because you don’t like it on tacos, nachos, guacamole, or in a sandwich doesn’t mean you don’t like it. Wouldn’t you know that she actually wants to try it more now and my youngest daughters love of avocados is back. Hmm…. strange. This smoothie is a great way to get a dose of healthy fats and lots of vitamins and minerals, need protein add a scoop of your favorite plain or vanilla protein powder. It is packed with healthy fats, Vitamins C, B, K, and A, calcium, iron, folic acid, and magnesium to name a few!
Orange Avocado Smoothie
Makes 1 big, or 2 smaller smoothies
1/2 avocado
1c fresh orange juice
Handful or two of spinach, or greens of choice (used Earthbound Farms Power Blend, a mix of organic baby spinach, baby red and green chard, and baby kale)
1c ice
1 scoop plain or vanilla protein powder, optional
Scoop avocado out and add with orange juice, greens, and ice to a Vitamix, or high-speed blender, blend until smooth. Enjoy!
