Yes another popsicle recipe but this one is more of an adult popsicle recipe! No it doesn’t have alcohol but it is a coffee popsicle and well most kids don’t like coffee, unfortunately mine like the taste of coffee. If you follow me on Instagram or are a regular reader you will know I LOVE coffee and the Vega Mocha Protein (Vega One and Sport Protein) are my favorite! I flipped when I first found them earlier this year and have been in love ever since. It was only a matter of time before I made a popsicle with them. Popsicles are a great post workout treat in the summer. I don’t know about you but after a good workout when it’s hot out I drink a lot of water and sometimes I find it hard to also drink a shake or eat anything after but I can grab a recovery or protein pop and it’s perfect. Also looking for a healthy treat and popsicles, ice cream, nana cream, sorbets, and other frozen treats are a go to for the family after soccer games. Since soccer is almost every night of the week I also like to make these for myself to enjoy, but lately they are great for an afternoon snack. There are 3 different mocha base options to fit your needs, a protein one, quick and simple using a pre made mocha drink, or make your own mocha recipe. For the caramel there are two options, you can use your favorite salted caramel or caramel sauce or you can make an easy protein “caramel” using almond butter. If you make the protein caramel using Justin’s Vanilla Almond Butter it is a real treat and so delicious! You could also make a date caramel or other raw caramel sauce of choice, these are just the two I have been going to but if I have date caramel for something else I would use it. Garnish with sea salt optional, if you use a salted caramel sauce you may not want to add the sea salt garnish but it is personal preference. My only complaint with these popsicles is you can just put the caramel in the mold and layer the mocha. I tried a few times and I couldn’t find a reliable way to make sure they would come out of the molds with the caramel staying in the bottom. I tried with my Zoku Quick Pop Maker and Zoku standard mold. You can drizzle it in the mold to layer but this works best with the protein “caramel” and depending on the caramel sauce used doesn’t always work with caramel sauce. Other than that and having to make batch after batch because I kept eating them or they were melting with the warm weather and or salt while I tried to photograph them these popsicles are a winner and a must have in my freezer and if you are a coffee lover yours!
Salted Caramel Mocha Popsicles
Makes 6 Popsicles
Coffee/ Mocha Base Options:
Protein Version
1 1/4c milk or water (used So Delicious Unsweetened Vanilla Coconut Milk)
1 1/4 scoop mocha protein powder (used Vega Mocha Sport Protein, Vega One Mocha is also a delicious choice)
Quick and simple
2 1/2c pre made mocha/coffee drink (used So Delicious Coconut Milk Mocha)
Homemade Mocha
1c cold press coffee or cold brew
1c milk (used So Delicious Unsweetened Vanilla Coconut Milk)
2 TBSP chocolate sauce (you an also make homemade chocolate with equal parts coconut oil, cacao/cocoa powder, and raw agave)
Caramel Options:
1/2 caramel sauce or salted caramel sauce
Quick protein caramel sauce
1/4c almond butter (used Justin’s Vanilla Almond Butter)
1/4c maple syrup
1 tsp vanilla, optional and can be omitted if using Justin’s Vanilla Almond Butter
Coarse Sea Salt for garnish (used Vanilla Sea Salt)
Pick your coffee option, blend or mix your coffee option if required. Pick your caramel option, mixing ingredients together if making the protein caramel sauce. If you would like a swirled caramel pop you can alternate with coffee base and caramel being careful not to get too much caramel in one spot as it will not come out of the popsicle mold in one piece. This option works best with the protein caramel option. Pour coffee base into popsicle molds and free per popsicle mold instructions. In our standard mold I freeze 6 hours or over night and in our Zoku Quick pop I freeze them for about 7 minutes. Remove popsicle molds and while you can dip them in caramel if it is warm and depending on the caramel it can slide off so it works best to lay the popsicles down on a plate or parchment paper and drizzle with caramel and place in the freezer to set if needed or until ready to enjoy, again depending on caramel sauce using. Sprinkle with sea salt and enjoy right away as the salt will melt the popsicles.
