What happens when mama, yep mom, wakes up with a craving for peanut butter stuffed french toast stick? The girls get these delicious vegan peanut butter stuffed banana french toast sticks! I can’t really got wrong with peanut and bananas right? I couldn’t even decide on which peanut butter to make them with. Plus I am always looking for new ways to enjoy the classic combo together. The best partโฆ. they are fluffy and soft and made them with sprouted whole grain bread! Or wait is the best part that they are quick and easy, or that they are delicious? Basically I wouldn’t hold it against you if you dropped everything and made these even if you don’t have kids to pretend to make them for like I did. These french toast sticks aren’t like the ones I had as a kid, they were puffy but not quite as puffy as I didn’t have super thick bread, but they were so much better than the ones I use to love. With the peanut butter you don’t even need to dip or top them with anything, but sometimes it is fun to dip things and they are delicious with syrup or jam. I’m sure this sounds like rambling but this is one of those recipes that speaks for itself and I just smile and giddy thinking of and want to run and make them again. Perfect for back to school and kids, and us kids at heart, love them!
Baked PB Banana Stuffed French Toast Sticks
Makes 2 servings
4 slices of bread (used Silver Hills Bakery Big 16 Sprouted Whole Grain Bread)
1/4c peanut butter, or more as desired (used Peanut Butter & Co Smooth Operator and PB&Co Dark Chocolate Dreams)
2 small-medium ripe bananas
3 TBSP coconut milk (used So Delicious Unsweetened Vanilla Coconut Milk)
1 tsp vanilla
1/2 tsp cinnamon
Preheat broiler to high. Slice half of the peanut butter on to 2 slices of bread and top with the other slices of bread creating two peanut butter sandwiches. Slice each sandwich into 4 slices. Place a siplat mat on a baking sheet or spray with non stick spray as baking paper will not work when placing under a broiler, it will catch fire. In a Vitamix, or high-speed blender, blend banana, coconut milk, vanilla, and cinnamon. Pour mixture into a shallow bowl or dish so you can dunk and coat each sandwich slice in the mixture. Place one of the sandwich strips in the mixture flipping until it is fully coated and place on the prepared baking pan. Continue with the remaining slices. You want to place the slices in two rows in the center of the pan if possible so they are under the broiler when placed in the oven and bake evenly. Place pan under the broiler (rack the 2nd down from top) and cook for approximately 2-4 minutes, watching carefully. Remove and carefully flip each slice and place under the broiler for another 2 minutes to bake the other side. Remove and let cool before serving. Serve with syrup, your favorite jam, or they are delicious without any additions. Enjoy!
