One of my favorite salad dressings isn’t really a dressing at all, it is avocado! Just massage the avocado into the greens with your hands, add some sea salt or pink himalayan salt and pepper, or other seasonings to taste. You can use any greens from spinach, chard, baby kale, romaine hearts, or whatever you have on hand. I like to use a mix of greens and I will add too it whatever fruits and or veggies I have on hand that I am craving.
What’s even better is this is a very kid friendly salad and a great way to get kids to try avocado and get away from processed dressings. I have one who likes dry salads with no dressing and another that likes ranch. One day I had my youngest mash the avocado into the salad, yep let them get their hands in there and get messy (of course after they wash them well first).
Here is one of the salads I threw together that is a sweeter salad and fun for kids.
A+ Salad
Makes 1 serving
1/2 of an organic artisan romaine heart, chopped
couple handfuls of mixed greens (used Organic Power Blend, baby kale, spinach, and chard)
1/4-1/2 an avocado (I like to use half an avocado)
1/2 a Gala, Fugi, or apple of choice, chopped
1-2 TBSP dried cranberries
1/2-1 TBSP black sesame seeds, or nuts/seeds of choice
sea salt or pink himalayan salt and fresh ground pepper, to taste
Massage (mash in and mix) the avocado into the greens. Top with chopped apples, cranberries, and black sesame seeds. Season with salt and pepper. Enjoy!
