Summer is coming and it’s time to get those abs in shape, haha! I think that is what my body miss think since I crave salads as soon as the weather heats up. Since I couldn’t think of a good name besides Avocado Blueberry Beet Salad which seemed like a mouthful I thought ABB Salad was more fitting. Yes I know what some of you are thinking already… beets and berries again?!? Yes I’m still on my kick and trust me once you try it you will be too! There is so much flavor in this salad and it is so filling that I love it for lunch or dinner. Craving it again I picked up some pre-cooked beets so I could whip it up in minutes since that is all I have some days with our crazy spring/summer schedule. Only mistake was I put the blueberries in the freezer and when I went to make the salad and knew I bought blueberries just hours before I couldn’t find them. You can make it with any greens you have on hand or your favorite. Veggies, fruit, healthy fats, texture, sweet and savory, quick and easy I think this salad has it all and it’s my jam right now!
ABB (Avocado Blueberry Beet) Salad
Makes 1 serving
4 small (or 3 medium) beets cooked, cooled, and diced*(used Love Beets to whip this up in minutes)
2c greens (used Earthbound Farms Organic Power Greens)
1/2 avocado, diced
1-2 TBSP chopped walnuts
drizzle of balsamic vinegar
sea salt and fresh ground pepper
*Cook beets wrapped in foil at 400F for approximately an hour, depending on size. Cool and remove skin, it should just rub off.
Grab a plate or bowl and throw everything together as desired! Really it is that simple. I quartered my beets as they are smaller if they are larger you can dice them. Drizzle with balsamic and season with salt and pepper as desired.
