AMP’d Up Smoothie

First weekend after school started and if felt like it flew by! Not ready for Monday and after a busy weekend I need a little boost. While coffee is my go to I like my smoothies and this AMP’d Up Smoothie is just what I need today. While I was feeling fall last week the temps warmed up over the weekend and are warm again this week. That time of year again where we go from craving warm comfort foods one day and refreshing smoothies the next. Last week I was baking with apples, not much just a little as we haven’t gone to the orchard yet, and this week smoothies with them. The delicious combo in this smoothie is a great transition with apple, mint, and pineappleā€¦it’s AMP’d. Yep I just had to, haha. Refreshing and just a little natural boost I like to make it with maple water.

So while the base of this AMP’d Up Smoothie is apple, mint, pineapple, and maple water (or sub coconut water) I add from there tweaking as I almost always do. If I want something a little more filling I add half an avocado, this makes it extra creamy. If I make it before a workout or need a little extra boost I add a scoop of Navitas Organics Focus Boost, which does change the color but is yummy and gives me that extra boost. Sometimes I do both for a morning smoothie. This is how most smoothies are for me getting a combo I love and tweaking from there based on my needs. There is always a smoothie, or smoothie bowl, for what I’m craving and need.

This week I’m really going to need smoothies like this AMP’d Up Smoothie to power through my long list to do as we try to get in a routine still with the girls being back at school and their activities, appointments, “single parenting it” while the husband travels, and packed weekends all month so catching up has been hard. I also have a long list of blog posts to get through editing photos and get written and get a few others tested and or photographed, so many exciting ones I cannot wait to share!! Getting into fall and while I’m not full on into pumpkin yet I’m really into apples, squash, and spices like cinnamon and chai. Baking bug bite hard with the cool temps last week! Oh and oatmealā€¦ A was requesting that last week so while smoothies and smoothie bowls won’t disappear oatmeal comes into the mix, along with pancakes, waffles, breakfast cookies, now toast with our homemade sourdough, and other warm breakfasts. That means smoothies aren’t in the regular rotation for breakfast but are still made in the afternoon for snacks, especially on days they have soccer, gymnastics, and dance. Plus anytime I want although I’m really trying to mix things up more throughout the week and not have the same things for breakfast, lunch, snack, ect. I did come up with a new twist on smoothies though and it’s becoming a staple, it’s one of the exciting creations I cannot wait to share.

  • 1 c maple water, or sub coconut water (DrinkMaple)
  • 1/2 c pineapple chunks
  • 1 small green apple, cored and seeds removed
  • 6 fresh mint leaves
  • 1/2 an avocado, optional
  • superfoods or adaptogens as desired, optional (1 scoop Navitas Organics Focus Boost in darker option as well as avocado)

  1. In a Vitamix, or high-speed blender, blend everything together until smooth. Pour into a glass and enjoy!
