Apple time! We go crazy during apple season picking apples. My youngest requested apple oatmeal cookies for breakfast one night. You know we love our cookies for breakfast! So I got up in the morning and whipped up these quick healthy cookies. My oldest often requests these cookies, in this and other varieties for an after school snack. Anytime you make them your kids, and you, are sure to love them. If you are one who likes to play around this is a good recipe to play with. I whip these up often and always change things up and this time I did just that adding hemp seeds for protein to mine, kept the oats whole, and added craisins.

 

Apple Oatmeal Cookies

Makes about 12-15 cookies

2 c gluten free oats**

1/4 c unsweetened natural applesauce (used our homemade applesauce)

1/3 c milk (used So Delicious Almond Milk Plus)

3 TBSP coconut palm sugar or sucanat (used Navitas Naturals Coconut Palm Sugar)

1 tsp pure vanilla

1 tsp cinnamon

1 tsp baking soda

1/4 tsp salt

1 medium apple peeled, chopped or grated*

1/4c add-ins chopped walnuts, pecans, craisins, or raisins optional

 

 

*If blending the cookies (making in a food processor) we used up to 1 1/2 cups of apples, if going for more texture use only 3/4 cup of chopped apple.

**Playing around I also make a version with 1 1/2 cups oats, 1/2 cup ground hemp seeds and added in craisins.

 

Preheat oven to 350. Chop oats in a food processor to a coarse chopped texture or oat flour. In a large bowl, mix together applesauce, milk, sugar, cinnamon and vanilla.  Stir in your oats , baking soda, and salt once they are blended in stir in apples and optional add-ins. For kids and portability I suggest making the cookies entirely in a food processor, or a magic bullet works. Add oats, baking soda, sugar, and cinnamon to food processor and process until well chopped or to a flour consistency if you want less texture. Add in applesauce, milk, vanilla, salt, and apples and process until combined. Stir in optional add-ins. Drop spoonfuls onto cookie sheet. Bake 10-12 minutes. Let cool a couple of minutes and remove from baking sheet and place on cooling rack. Enjoy!
