It doesn’t happen often that we have fruit that needs to get used up before it goes bad but when we do I like to make smoothies or freeze it to make smoothies later. After spending a month in Ireland we came home and went crazy on produce. My mom had already bought a bunch of bananas, plums, peaches, and grabbed milk so we didn’t have to run to the store when we arrived home late from our long flight. Well after my dad picked us all up I asked him to stop quick at the grocery store on the way home. I came out with a cart full of produce and both him and my husband laughed asking me where I was going to fit it with all of our luggage. I said I didn’t care if I had to hold it all! The girls ate most of the fruit within the first day. The day after we got home we went and got more groceries. Maybe it was the fog I was in or just feeling overwhelmed, yes I missed the grocery stores here, but we ended up with more apples, and lots more fruit. Long story short we had some pears to use up, we don’t like them when they are too soft, as well as some raspberries I stocked up on because I was surprised to still see them in season and looking so good. I have had apple, pear, raspberry juice before but for some reason this time it really hit the spot. It is great thick as a whole food fruit smoothie, with more water as a juice (which makes 2 large kids juice portions when you add a cup to two cups of water), or when I crave it and need protein I add a little natural flavored Vega protein powder.

 

Apple Pear Raspberry Smoothie

Makes 1-2 servings

1 apple

1 pear

1/2 c raspberries, fresh or frozen

1/2 c water* ice, optional

1/2-1 scoop protein powder, optional (I like to add Natural Vega One or Oh Natural Vega Protein Smoothie to this one when I need protein)

 

*This is a thick smoothie with the consistency of apple sauce, you can also add more water to make it more like a juice which is also delicious.

 

Slice and core the apple and the pear. In a Vitamix, or high-speed blender, blend together apple, pear, raspberries, water, and optional ice and protein powder if adding until smooth. Enjoy!
