While at the grocery store picking up some peaches the cute little apricots called out to me so I picked up a few and decided to make a shake with a couple of them. I also made these shakes for the girls but used less ginger and omitted the protein powder, they had this prefect pale orange/peach hue. I just wish they would have let me take a picture of them. I went to answer the phone that was ringing and when I turned around I noticed the smoothies were missing and they were half gone!
Apricot Ginger Protein Shake
Makes 1 serving
1c cashew milk, or other non dairy milk of choice (used So Delicious Unsweetened Cashew Milk)
1 scoop natural or vanilla protein powder (used Vega One Nutritional Shake), optional I left it out of the girls
2 ripe apricots, pits removed
1/2 tsp grated ginger
sprinkle of allspice, optional
In a Vitamix or high-speed blender blend together milk, protein powder, apricots, ginger and ice until smooth. Pour into a glass and top with a sprinkle of all spice. Enjoy!
