Avocado Green Smoothie

 

I had wanted to post 7 “Lucky Green Smoothies” but I realized I didn’t have 7 days open to post them before St. Patrick’s Day. I am still going to get in a few green smoothies before St. Patrick’s Day. If you aren’t a green smoothie person, this is the perfect time to try them. It is also a great time to get kids to try them. What is your favorite green smoothie combination?

Avocado smoothies were one I was skeptical to try at first. I am not sure why, I love avocado but just wasn’t sure I wanted them in my smoothies/shakes. When I finally took the plunge I was mad, mad that I waited so long! Avocado smoothies are so thick and creamy and oh so delicious! We make a few different avocado smoothies but these versions are our favorites. Again like my other shakes/smoothies how we make them depends on our needs for the day or when we are enjoying them and I always encourage you to customize yours to meet your needs. We will usually make this into 2 smoothies, or sometimes 3 if the girls just want a small one. When I do this I will start by making a batch and remove out a portion and adding in remaining ingredients.

 

Here is the general recipe.

If we want to make protein smoothies we will add 1/2 a mango and 2 scoops of protein. I like to make it with Vega Protein Smoothie Oh Natural (when I use the Protein Smoothie I also add gelatinized maca to mine, the girls like the Vega Protein Smoothie Tropical Tango.

If we want to do a whole food smoothie we will  a whole mango and add hemp seeds and flax.

 

Avocado Green Smoothie

Makes 1-2 servings

1 ripe whole avocado, pitted and halved

1 1/2 c coconut milk (So Delicious Vanilla Coconut Milk)

Handful or two of organic greens (used Earthbound Farms Organic Power Greens)

1/2- 1 mango, peeled and pit removed

1-2 scoop Vega Protein Smoothie Oh Natural or Tropical Tango, optional*

*when omitting the protein smoothie I will add 2 tablespoons raw shelled hemp seeds and 1 tablespoon ground flaxseed.

 

Scoop out avocado into a Vitamix, or high-speed blender, add coconut milk, greens, mango, and protein , blend until smooth. Add more milk if needed to desired consistency, again it will be thick, and creamy! Add ice if desired, we like ours cold so we almost always add ice to our smoothies/shakes. Blend smooth. Enjoy!
