Switching up the breakfast game by adding some veggies, but this isn’t a savory breakfast this is one week combo! You know I love my beets, you can’t beet them, and with berries their even sweeter! If my blogger friend Amanda is reading this I’m sorry, not sorry, I just can’t stop I love my beets! This isn’t just a breakfast it can be enjoyed anytime you want to turn your parfait game up a beet. Ok sorry I will stop with the beet puns. Haha!
Beets have always been a favorite and maybe it’s just the bright pink color. Great in soups, smoothies, salads, dinners, sandwiches, juices, ect. I haven’t found a way I don’t like beets and while I debated on blending them into yogurt for a pretty pink parfait I decided to layer them because I thought they’d pair perfectly with a little lemon zest. This is optional and it’s just as delicious with vanilla yogurt but it’s March and I’m already feeling the need for Spring and everything fresh and flavorful!
While this parfait would also be delicious with granola, I was really wanting to use WholeMe Lemon Berry Chia Clusters in it or even Seven Sundays Blueberry Chia Buckwheat Muesli I decided to go with simple nutrition staples and use chia seeds and hemp seeds. It was such a great combination! Again this is one of those recipes as I’ve stated before that’s suppose to be inspiring and you can use what you like and what you have on hand. Any plain or vanilla yogurt, if you only have one or two kinds of berries use those, if you are like me and have blueberries, raspberries, and strawberries to use up sneak them all in. If you like chia seeds and hemp seeds and have those on hand use those, if you’re more of a granola lover use that. We are all different, unique, and have our own tastes. If you want to make it exactly as I did great I know you’ll love it as much as I do. Ok if you don’t like beets maybe not. Beet and Berry Parfait
Makes 1 serving
1c plain or vanilla yogurt of choice (our favorites are So Delicious Coconut Milk Yogurt for dairy free or plain Siggi’s)
2 small to medium beets, diced (used Love Beets)
1c fresh berries (used a combination of chopped strawberries, blueberries, and raspberries)
zest of 1 small lemon, optional*
1 TBSP chia seeds (Navitas Naturals)
1 TBSP hemp seeds (Navitas Naturals)
stevia or sweetener of choice if using plain yogurt, optional
*reserve the juice of the lemon to use in water
Zest lemon and stir into yogurt, add optional sweetener of choice to taste if desired. In a jar or bowl layer yogurt, berries, beets, chia seeds, and help seeds. Enjoy!

You can roast beets wrapping them in foil and placing on a rimmed baking sheet and baking at 350 for about 30 mins but it depends on the size of your beets. Let them cool and remove the foil and skin. Cool and store in the refrigerator.
