Beet Fajitas

Yep you read that right, Beet Fajitas, not Beef Fajitas! I have a little obsession with beets right now and decided to make some Beet Fajitas. They were delicious, even the meat loving hubby liked them! This is a quick, easy, healthy meal and is great for weeknights.

 

Beet Fajitas

makes 4 servings, 2 each

8 organic beets, roasted and skins removed (I used 6 regular beets and 2 golden beets)

half a red onion, thinly sliced

2 sliced avocados, sliced

8 taco size tortillas (used Ezekiel 4:9 Taco Size Whole Grain Tortillas, love these!)
other toppings of choice
Slice your beets, I sliced mine into quarter inch blocks, you can cut them however you would like. On your tortilla layer your beets, red onion, avocado and other optional toppings of choice. Quick, easy, and healthy! You can make the beets ahead of time or you can purchase already cooked beets. Enjoy!
