Beets are back, back again, beets are back, tell a friend! Haha. They never really left but I made it a whole month, exactly, without posting a beet recipe! I say this calls for a toast, especially on Wine Wednesday, so raise a slice of Beetiful Toast and celebrate. I’ve been waiting to share this Beet Spread and Beetiful Toast and it wasn’t easy. A simple easy to make colorful toast that can go savory or sweet. You can also use the beet spread for other things than just toast and even a delicious dip. Shh I’ve even made a little to much before and added coconut milk in to thin it out making a delicious soup. It’s a transforming, and hey maybe even “trendy” spread.

This bright bold Beet Spread is made with only 3 ingredients! Yes, 3, well unless you want to go sweet you can omit the roasted garlic and you’re down to 2. Just beets and yogurt! Of course I had to use both golden and regular red beets because I can’t play favorites. Plus it’s fun to swirl the colors of both and as I said it’s so versatile that it will get used up. If you use a plain Greek yogurt it will have a little more tang, keeping it dairy free I also make it with coconut milk yogurt. I’m not sure what I was thinking when I first made this. I often have roasted beets in the fridge or Love Beets that are already cooked for when I don’t. I’m not sure if I was just wanting something different then my Beet Hummus or thinking I wanted to make beet cream cheese and was out of cream cheese. The dairy free one I buy has been out of stock a few times recently.

My favorite way to enjoy this Beet Spread is with the roasted garlic on toast or on a sandwich. As I’ve recently said we are now into soccer season and with both girls playing traveling soccer it takes up a lot of time and we are busy pretty much every night of the week now through mid July. Dinners are quick and easy. Sometimes broken into two smaller meals for nights like last night when we have to leave just after they get out of school to drive to a game or scrimmage so they aren’t very hungry or don’t want a large meal before playing but are hungry when they get home but it’s too late for a large meal. Sometimes they have games back to back, sometimes it’s a divide and conquer with each of us taking them to a practice or a game. Toast is a go to, which would have not been the case in the past years. I was joking with my husband a few days ago that we can just do smoothies and sourdough, joking of course.

Beet Spread
Makes approximately 2 cups*
1lb cooked beets (about 3 medium), peeled and cooled or for quick and easy Love Beets refrigerated cooked beets
5-6oz plain yogurt (So Delicious Unsweetened Plain Coconut Milk Yogurt or non dairy free we use Siggi’s Plain Yogurt)
2 cloves of roasted garlic, omit for sweet
Sea salt and pepper to taste, omit for sweet

*Shown is two batches of Beet Spread, one with golden beets and one with red beets.

In a food processor, or Vitamix, blend cooled roasted beets, yogurt, and roasted garlic until just smooth. Season with sea salt and pepper to taste.

 

Beetiful Toast
sliced sourdough, or bread of choice (used our homemade sourdough)
Beet Spread
toppings of choice (used blueberries, chia seeds, Kite Hill Dairy Free Ricotta Cheese, onion,  balsamic vinegar, smoked peppered salmon, micro greens, and local Bare Honey)

Toast bread, spread with Beet Spread, top with toppings of choice. Enjoy!
