It flips your lid when you are a kid with fairly oddparents! I’ve got something, maybe a little odd, for you today… Berry OddParent Pancake Sundae Bowls! Yes ice cream for breakfast, or hey if you aren’t into ice cream for breakfast dessert (or there is a yogurt option). Like I said maybe a little odd but perfect for today being a holiday week and next weekend being National Strawberry Sundae Day! Yes

We’ve been on a big pancake, and waffle, kick lately so much so I haven’t been making sourdough much and I’ve been rolling up pancakes with pb&j for lunch. I’ve been craving them seriously lately just like the girls.

Ice cream for breakfast?! Yes my mom gives the girls ice cream for breakfast sometimes and as crazy as I thought it was sometimes when you think about it it’s not any worse than having pastries or some other “traditional” breakfast foods. You can swap the ice cream out for yogurt if you’d like but a serving of the Vanilla NadaMoo! dairy free ice cream we used has less calories and sugar than most yogurt and more fiber.

This is more of a point that even though we try to eat healthy most of the time and fuel our bodies right we have some crazy food quirks of our own and this is a perfect time to share. A big one being breakfast foods aren’t just for breakfast, dinner foods for dinner, and we might have breakfast for dinner, a salad for breakfast, ect. Honestly in my opinion it’s best to have a sugary indulgent dessert for breakfast so you can burn it off all day vs as night just before going to be and I’ve noticed as I’ve gotten older I like my sweets in the morning.

I mean Kate Spade said it best with “Eat Cake For Breakfast” and I have a shirt that says Ice Cream For Breakfast too.

A few favorite combos are: berries and pure maple syrup, berries and chocolate, homemade strawberry jam and strawberries, and peanut butter and homemade strawberry jam with some granola bites. There are endless options though and one I’ll be sharing this week with leftover pancakes, maybe yogurt instead of ice cream or none I don’t know, and fresh strawberries since we’re picking them today (and probably another 2-3 times this week)!

Now to some fun “OddParent” food fun facts!

We sometimes have Popcorn Casserole for dinner, if you put the word casserole after popcorn it makes it acceptable for dinner! Kidding but when we have crazy soccer nights and the girls have a small dinner early at 3-4pm we’ll have something later and popcorn is a favorite.

Brinner, breakfast for dinner, is a regular thing in our house! We love breakfast foods and will eat them anytime of day.

Sometimes we even have cereal for dinner. Not so much anymore as we go in streaks of even eating cereal as it’s not something we eat to often. I use to eat cereal almost daily after school growing up.

Dessert for breakfast happens! Yep if an apple turnover, donut, cinnamon roll are considered breakfast pretty much any dessert can be. When we would go out and I was too full for dessert I would get it to go and eat it for breakfast with coffee!

Smoothies (or smoothie bowls) all day, any time of day! Same goes for pancakes, waffles, and toast!

Since we started making sourdough bread toast for any meal happens more often.

Fruits and veggies, we eat so many I often get asked how many kids I have at home. Or sometimes I even get asked if we have horses, not just kids who love veggies. They aren’t afraid to tell you they love them either if you question what’s in our cart.

Family Foodies Dates and this years’ theme is sushi (donuts and pizza past years) and once a month we go to a new place.

We like sushi! Not really odd to me but the fact that we went to Colorado and had it 3 times while there, came back and it was National Sushi Day that after they had it 6 times in 2 weeks and asked for it again I said we had to make our own, which we did.

Since making sourdough bread since a little over a year and a half ago (life changing for me) I can count on one hand how many times we’ve bought bread or buns.

My favorite strange food combos… avocado and peanut butter as well as pb&j with potato chips! I don’t like or really eat potato chips but since I was a kid I add them to my sandwiches, not just pb&j.
Oh I also LOVE the Elvis combo of peanut butter, banana, honey, and bacon. Although I don’t like bacon I would add fake bacon, or in more recent years coconut bacon because it needs the salty balance.

When traveling we like to check out new and different places and have a “rule” we can’t eat anywhere we have back home, coffee not included because traveling I need my coffee and sometimes just get what I get not local coffee shops.

I’m sure we have more but back to these sundaes. These are like other creations I’ve stated are for inspiration. You can use waffles, donuts, pretty much any breakfast pastry. It’s also a great use for leftovers and like I said breakfast or dessert. I also made pancake puffs but they didn’t photograph as well. We’ll be trying them this week with pannekoekens and all the fresh picked strawberries! Which reminds me I’ve been making “popover style” pancakes that I have to share soon too! Although these are vegan they are easy to make paleo, gluten free, ect.

  • 1 pint ice cream (Vanilla NadaMoo!)
  • 1-2 c berries of choice, and or berry topping
  • other toppings of choice (used fresh berries, homeade strawberry sauce, Hu Chocolate, Bare Pure Maple Syrup, Made Good Granola Bites)

Prep Time 5-10 minutes

  1. Make pancakes according to package instructions.
  2. Put pancakes in a small bowl and add a scoop of ice cream.
