The peaches have been really good this year so we have been enjoying them as much as possible. I love the combination of peaches and berries. These Berry Peach Overnight Chia Oats combine berries in with the chia oats and I top or layer with fresh ripe peaches. You can use any berry you like, in these we used blackberries and strawberry. I also love peaches paired with blueberries and raspberries. I usually get the craving to make one of them right before a workout so I take my pre-workout energizer and in the 20 minutes before I workout I whip these up so they are ready when I am done. You can also make them the night before for a quick healthy breakfast in the morning. I add my favorite plant-based protein powder to mine but omit it for the girls. I also use chia seeds in mine but the girls aren’t a huge fan on chia seeds in their overnight oats so I use chia powder for theirs. You can customize as desired. While most people enjoy overnight oats for breakfast I also love them for snack or dessert adjusting the oats and chia seeds using more chia seeds when making in the afternoon.

Berry Peach Overnight Chia Oats

Makes 1 serving 

1 ripe peach

3/4c non dairy milk (used So Delicious Unsweetened Coconut Milk)

1 TBSP chia powder, could also use seeds (Navitas Naturals Chia Powder)

1/3c oats, gluten free

1/2c berries, fresh or frozen (used strawberries)

sweetener of choice if needed as desired, this will depend on berries and milk used, as well as personal preference we didn’t add any

additional toppings as desired, optional

Berry Peach Overnight Chia Oats

Makes 1 serving 

1 ripe peach

1c non dairy milk (used So Delicious Unsweetened Almond Milk Plus)

1 scoop vanilla or berry protein powder (used Vega Performance Protein, Vanilla)

1 TBSP chia seeds, could also use chia powder (Navitas Naturals Chia Seeds)

1/4c oats, gluten free

1/2c berries, fresh or frozen (used blackberries)

sweetener of choice if needed as desired, this will depend on berries and milk used, as well as personal preference we didn’t add any

additional toppings as desired, optional (used hemp seeds and finely shredded coconut)

 

 

There are many ways to make these, you can make it the night before or if you are like me make it before a workout so it is ready after. You can blend or mash your berries and milk depending on how much texture you want. In a bowl or jar mash berries and stir in milk. Add oats, chia seed/powder, and protein powder if using, stirring until combine. Or in a Vitamix, or small food processor, blend milk, berries, and protein powder if using. Pour into a bowl or jar and stir into chia seeds/powder and oats in a bowl. Set in the refrigerator for 15 minutes or overnight. If you are making the night before and are taking it to go you can top with diced or sliced peaches or pull it out after 15 minutes and layer and place back in the refrigerator until ready to enjoy. Otherwise after 15 minutes or in the morning chop or layer with diced or slice peaches. I like to layer if putting it in a jar so I get a bite of peach each time. If placing in a bowl I just add them on top. Top with optional toppings if desired. Enjoy!
