Some mornings, or should I say days, you just needs some delicious healthy comfort food. One of my favorites is porridge, which is so versatile. It can be made with so many grains, it can be enjoyed anytime of day, hot or cold, and with so many flavors and toppings the options are endless! This is a simple version that is packed with whole food delicious nutrition. I can’t say if we like it better hot or cold because it’s delicious both ways. On chilly mornings or rainy days it’s like a hug in a bowl and great warm. For a quick breakfast or dinner in the warmer summer days it’s great cold. Either way can be enjoyed on the go in a mason jar, made the night before for cold, and even made out in the woods if you are hiking or camping! While this is a simple berry hazelnut wild rice version you can make it with any kind of rice, and top it with anything. Another family favorite is cinnamon and bananas which is great for quick dinners before soccer or gymnastics! It’s great to make a quick pot of rice and let everyone top it with what they want, kids love it when they get to help and customize their dinners. Also good for those that batch cook for the week or have leftover rice from dinner. Dress it up, dress it down, it’s like your favorite broken in pair of jeans. Eating healthy doesn’t have to be hard or boring, think porridge can only be a breakfast or winter food? Think again!
What would be your perfect porridge?
Berry Wild Rice Porridge
Makes 4 servings
1c wild rice, or wild rice blend (Lundberg Wild Rice Blend)
1 3/4-2c (or amount per rice instructions) water or non dairy milk, plus extra for serving (So Delicious Unsweetened Vanilla Coconut Milk)
2-3 pints fresh berries (Driscoll’s blueberries and raspberries)*
1/3c chopped raw unsalted hazelnuts, optional
1 tsp cinnamon
sweetener of choices as desired, we don’t add any if adding the maple syrup
1/4-1/2c maple syrup
*Or fruit of choice, another favorite in our house is bananas and cinnamon or adding in bananas to the berries, any berries.
Cook rice according to package instructions using water or milk. Fluff with a fork, cinnamon can be added in or sprinkled on top, if wanting sweetener you can also add it in now. If serving warm spoon rice into a bowl and top with berries and chopped hazelnuts, milk if desired, and drizzle with maple syrup. If serving cold place rice in a refrigerator to cool. Once cooled spoon rice into a bowl and top with berries and hazelnuts, milk if desired, and drizzle with maple syrup. Enjoy!

We usually have it more in the winter months but also like it cold in the warmer months and with all the berries it’s so great for a filling breakfast!

Yes! I go in phases of smoothie bowls/smoothies for breakfast and grains for breakfast. It’s great to switch up the grains but so often I get in a rut or phase where I have the same ones just topped differently so this was a great change. I love it cold in the summer months with fresh fruit!
