Happy Monday, and today’s an exciting one with the Solar Eclipse! I couple weeks ago I posted a picture of Black Cacao Nice Cream on Instagram and didn’t intend on posting the recipe as I just threw things together but you asked for it and I figured today would be the perfect day to finally share it. I mean quick and easy Black Cacao Nice Cream with edible glitter screams the perfect treat to enjoy while watching the eclipse to me!

After seeing black ice cream on Instagram I had it on my list to try if ever in a place that had it. I liked how the black cones and ice cream made all the toppings pop! I’ve had Blackest Black Ice Cream at a local coffee shop which is just cacao coconut ice cream but it was scooped and there weren’t any toppings. While grabbing something out of the cupboard the idea popped in my head to make my own when I saw the bag of activated charcoal sitting there. I had bought it, as I stated in a previous post, to make a lump of coal sourdough for Christmas last year as a joke. Joke was on me I guess as it didn’t taste any different and we ended up making 6 loaves because people liked it. When I ordered the activated charcoal on Amazon for the bread I had no clue that there would be that much. The only other thing I thought I would use it for was DIY face masks, which we’ve done a few times. So I thought why not make my own black ice cream. It turned out better than I thought, basically just tasted like creamy chocolate and bananas as I added cacao. Then the fun part of adding edible glitter and toppings. The first time I used gold glitter and added Go Macro Bar chunks. After posting that photo on Instagram I got requests for the recipe so I had no choice but to make it again, and again, and yep again. Not that I was complaining, because I wasn’t, and got to play with lots of fun topping options. The only thing that wasn’t fun is when I had a couple mishaps and had to clean the black mess off my white kitchen cupboards.

The best thing about making it “a few” times was not only having it for breakfast but I got another genius idea to make it with caramelized bananas! Yep it takes a little longer as you have to caramelized them and then freeze them but it’s so good. With or without the cacao and charcoal this is a must try for sure. Craving it and testing scooping ice cream I had to make a little sundae adding caramelized bananas. I know caramelized bananas on top of Black Cacao Nice (aka Banana Ice) Cream is a little bananas, but oh so good!

I had planned on testing another version with a sub for the activated charcoal making it black but decided not to not only because of time but also because I got a little carried away with the caramelized banana version. I might try to whip up another one this morning or sometime today as I already have caramelized bananas ready to whip up a batch to maybe enjoy while watching the eclipse today but will depend on timing as A has a birthday party during the eclipse and S is part of a mentor program so she will be up at school. Meaning I may or may not get to see it with all the driving around but if time permits I’ll be whipping this up to enjoy on the go or at some point today.

As for safety as I stated in Friday’s post, I am NOT a doctor and I always encourage you to do your own research before consuming new things. If taking medications it can interfere with them so if you are I would double check as you wouldn’t want to interfere with them being absorbed and working properly. That said it is a very small amount and I don’t use it for anything other than natural coloring.

Today not only is a big day with the solar eclipse but also Meatless Monday! Ingredients
  • 4 frozen bananas sliced/chunks
  • 1/2 c canned full fat coconut milk (So Delicious Culinary Coconut Milk Original)
  • 1/4 c cacao powder Navitas Organics
  • 1 TBSP activated charcoal
  • 1-2 TBSP agave, or sub honey or maple syrup
  • 1/4 c non dairy milk
  • toppings as desired (we used edible glitter, Quinn Maple Kettle Corn, Whole Me Salted Peanut Chocolate Cliusters, caramelized bananas on scooped photos, and Go Macro Bars and other toppingsones shown on Instagram)

Instructions
  1. In a Vitamix, or high-speed blender, blend coconut milk, cacao powder, charcoal, and agave until smooth. Add frozen bananas and blend using the tamper tool until smooth and creamy. Adding up to 1/4 cup non dairy milk only as needed.
  2. If you do not have a Vitamix, or high-speed blender, you can use a food processor. Process frozen banana slices until smooth, add in coconut milk, cacao powder, charcoal, sweetener and process just until smooth. Adding non dairy milk only if needed and only as much as needed.
  3. For soft-serve enjoy right away. If you want scoopable ice cream pour into a freezer friendly airtight container, or a bread pan and top with plastic wrap. Freeze for 3-6 hours until frozen and allow to thaw 5-15 minutes before scooping.
  4. Scoop into a bowl or cone, add desired toppings, and enjoy!
Recipe Notes

Have extra time and want a real treat caramelize your bananas and then freeze them before blending!
