The kids love these mini oatmeal bites and with it being blueberry season I decide to whip up some blueberry ones. With no added sugar these muffins get their sweetness from banana so if you are looking for a sweet muffin you may want to add sugar. I added my protein powder to mine for an extra nutritional boost.
Blueberry Banana Oatmeal Bites
Makes 32 mini muffins
2c oats, gluten free
1 tsp vanilla extract
1 cup pureed ripe banana (about 2 large)
1 ½ c almond milk (used So Delicious Almond Milk Plus)
¼ tsp salt
½ tsp baking powder
¾ c fresh blueberries
1 scoop vanilla protein powder (used Vega One French Vanilla)
Optional topping
2TBSP coconut palm sugar
1/2tsp cinnamon
2-3TBSP sliced almonds, crushed (optional)
Combine coconut palm sugar and cinnamon. Sprinkle mixture over muffins and sprinkle optional crushed almond slices on top. I sprinkle some with just the cinnamon coconut palm mixture and some I add that and the almonds.
Preheat oven to 350 degrees. These can be made in a blender like my other Oatmeal Bites or for these ones I grind the oats first into oat flour. After the oats are ground add the baking powder and salt to the oats in a bowl. Add pureed banana, milk and vanilla to the oat mixture and mix until just combine. Fold in blueberries and optional protein powder (when making just one batch I make some without for the kids and add the protein powder to mine) and pour into mini muffin tin, you can basically fill them as they won’t puff up a lot like muffins or cupcakes. Sprinkle with optional topping. Bake for 20-25 minutes.
Let muffins cool in pan until they are cool enough to touch. Remove from pan and let cool. Enjoy!

Thank you. I am not sure. I have tried some of my oatmeal bites in large tins and some work and some do not. You can try it, I would just make sure your batter is on the thinker sde and cook them longer. They are quick muffins in the mini and they tend to stay very moist and not cook all the way through sometimes in the larger muffin tins. Hope that helps. If you do try it let me know how it works.
