Blueberry Bottom Banana Protein Parfait

Wanted to shake up my morning breakfast smoothie and decided I didn’t want a smoothie, shocking I know it is one of my regular go tos. I decided to make a parfait of sorts. Love bananas in the morning before my workout and add them to smoothies, eat them alone, or love them with my sprouted toast with almond butter. Blueberries are another favorite and they are packed full of antioxidants. So I  layered blueberries, made a frozen banana “ice cream” of sorts and added my favorite protein/nutritional shake Vega One French Vanilla and then decided to top it with Vega Savi Seeds Oh Natural*! Yum! This would make a great pre or post work out snack or delicious dessert as well!

 

Blueberry Bottom Banana Protein Parfait

makes 1

1/2c frozen organic blueberries (frozen or thawed)

1/2c almond milk, or non dairy milk of choice (used Silk Unsweetened Vanilla Almond Milk)

1 scoop protein or nutritional powder, optional (used Vega One French Vanilla)

1 frozen banana, cut into chunks

1-2 TBSP chopped sacha inchi seeds, Savi Seeds (used Vega Savi Seeds Oh Natural)

 

Put blueberries, thawed or frozen, in the bottom of a glass or bowl. In a Vitamix, high-speed blender, or food processor add frozen bananas, milk, and protein powder and process until smooth. Pour or spoon banana mixture on top of the blueberries and sprinkle with Savi Seeds. Enjoy!

 

*I first learned of Vega Savi Seeds last year while attending a class at Whole Foods (also where I first heard of Vega, and bought my first tub, been hooked since) and this woman raved about how good they were. Savi seeds, also called sacha inchi seeds, have more Omega-3 than salmon, are packed with complete protein, and are gluten-free. They come in 3 flavors and this lady loved the chocolate ones for a snack. I plan on picking up the other two flavors soon!
