I had some cashew cream that I needed to use and thought it would work perfect in a cheesecake shake. Since it is National Blueberry Cheesecake Day I made a Blueberry Cheesecake Protein Shake!
1 scoop natural, unflavored, protein powder (used Vega One Natural)
1c almond milk, or non dairy milk of choice
1 tsp lemon zest
juice of half a lemon
1/4- 1/3c cashew cream (recipe)
1″ piece of vanilla bean
1/2c blueberries, fresh or frozen
Optional sweetness of choice, if desired
Ice (approx 1c or to desired consistency)
*If you are looking for a real cheesecake flavor you may want to add a drop of LorAnn Oils Cheesecake Flavor.
In a Vitamix or high-speed blender blend protein powder, milk, lemon juice, cashew cream, vanilla bean seeds, and ice until smooth. Pour into a glass. Rinse blender and puree blueberries, layer on top of shake. Alternatively you can blend everything together if you do not want to layer it. Enjoy!
