Ever get in the mood where you want the same thing but different? Maybe it’s one of your families favorite meals so you switch it up a little so you are having the same thing but different, maybe the same flavors, maybe the same foods, or maybe just the same type. I think we all get into these moods. Weather it be wanting to have salad or soup every night, or having the same breakfast for weeks on end, or wanting Mexican food every night, or maybe making a big batch of something and then trying to enjoy it a bunch of different ways. We do that a lot too. I had just made my Blueberry Mint Freekeh salad and wanted to make it again but just wanted that for dinner but wanted more, but not more of it because I can only handle so much gluten. I was going to make it with quinoa but I had run out and I had a bag of freekeh left. To bulk it up and switch it up I decided to make a kale salad. Keeping the blueberries and freekeh, dropping the mint and adding in onion, and instead of using olive oil I used avocado. When I eat a kale salad I love to use avocado to message it into the kale and make it softer and just overall it makes this salad a little creamy.
Blueberry Kale Freekeh Salad
Makes 4 servings
1c freekeh, or quinoa for gluten free (used Freekeh Foods Organic Freekeh)
1-2c fresh blueberries (used Driscoll’s)
2 TBSP maple syrup, or honey
4 TBSP lemon juice
1/4 red onion, thinly sliced
1 ripe avocado
8-10oz kale, chopped and destemmed
sea salt and pepper, to taste
Cook freekeh according to packaged instructions. Remove lid after cooking and allow to cool for 10 minutes. In a small bowl mix together maple syrup and lemon juice and set aside. Cut avocado in half, remove the pit, and scoop the flesh into a large bowl. Add kale to the avocado and message the avocado into the kale using your hands. Add in freekeh and toss or mix with your hands. Drizzle in maple syrup lemon juice and toss to combine. Add onion and blueberries and toss to combine. Season with salt and pepper to taste. Enjoy!

They make a pretty delicious pair! Yes quinoa is a great option and one we love as well, just didn’t photograph as well. :/ I can handle some gluten so I like to add this into the rotation as the girls like it and it is a great source of protein.

Yes, it has the texture of steel cut oats, so more of a bite and chew than quinoa and a slightly nutty flavor. I love this salad with quinoa it just photographed better with the freekeh so I posted that version. I can handle some gluten so I like to add this into the rotation every now and then for the girls as it is a great source of protein.
