Happy National Blueberry Pie Day!! Yes you can drool over this pie shake and eat it too!
Blueberry Pie Protein Shake
Makes 1 serving
1c almond milk, or milk of choice (used Silk Unsweetened Vanilla Almond Milk)
1 scoop Vanilla protein/nutritional powder (used Vega One French Vanilla)*
dash of cinnamon
1c frozen blueberries
1/4c frozen or fresh blueberries for topping, optional
crust, recipe below, optional
*Omit this for children.
In a Vitamix or high-speed blender blend milk, protein powder, cinnamon, and blueberries until smooth. Pour in a glass and top with optional blueberries. If making optional crust lay pieces across the top. Enjoy!
Optional Pie Crust
1 TBSP raw cashew butter
1 tsp raw agave
2 TBSP almond meal
To make crust mix cashew butter and agave together, add in almond meal and mix until combine. Roll into a ball and flatten on parchment paper. Cut strips with knife or pizza cutter. These will be fragile so I made the lattice work on parchment paper and transferred to top of glass. Most of the extras that hung over fell off and I removed others for a clean edge. If you want you can just crumble the crust over the top!

This was a bit too sweet for me so I removed the cinnamon and added 1/4 cup of water to make the vanilla flavour less dominant! Otherwise it was good!
