After picking all those blueberries I knew I would make oatmeal for breakfast but I decided I wanted to make something a little different and I decided to add pistachios and bananas. Yum!
Blueberry Pistachio Oatmeal
Makes 1 serving
1/2c oats (used gluten free)
1/2c fresh blueberries
2TBSP raw pistachios, chopped
1/2-1 banana, sliced (used 1/2 a banana)
cinnamon sugar, sweetener of choice, and or vanilla, optional (used a little cinnamon and Navitas Naturals Coconut Palm Sugar, mixed)
coconut, almond, or non dairy milk of choice (used a little So Delicious Unsweetened Vanilla Coconut Milk)
Make oats according to directions. Add cinnamon sugar, bananas, and blueberries while still warm. I let these cool a bit after as I had wanted to make cold oats but forgot to make overnight oats the night before. Had I made the overnight oats I would have made them with coconut milk and added the cinnamon sugar when mixing and then adding bananas, blueberries, and pistachios in the morning. Topped with pistachios and I poured a little coconut milk over. Enjoy!
