Have you heard about the hottest new grain, Freekeh? If you haven’t you have to check it out, I am literally going to freak out for freekeh! At 130 calories, 6 g protein, and 4 g fiber per serving it is a powerful grain to add to your diet. I decided to whip up a Power Bowl/Breakfast Bowl with this new grain to give my family a strong healthy start to this cold snowy day. I am not sure if spring will ever come here in Minnesota. If you are lucky enough to be somewhere warm right now this is also a great one to have cold. If you are one to use leftover grains for breakfast, like I usually do, and made your freekeh with water or you want a creamier bowl you can stir in canned coconut milk (I like So Delicious Culinary Coconut Milk, which is in a small box next to the canned coconut milks) into your cooked freekeh or stir a little in while cooking.
Again I think of my recipes as inspiration and I encourage you to customize them to suit your nutritional needs and tastes. So my daughter’s added sliced bananas to theirs in place of the walnuts. Like blueberries, walnuts, and bananas, add all 3!
Blueberry Walnut Freekeh Breakfast Bowl
Makes 4 servings
1 c, 8oz, freekeh (used Organic Freekeh Foods Original)
2 1/2 coconut milk (used So Delicious Vanilla Coconut Milk)
2 cups fresh or frozen blueberries, thawed if using frozen
1/2 c chopped walnuts
2 bananas, optional
Cinnamon and or sweeteners of choice to taste (used a mix of cinnamon and coconut palm sugar and sprinkled over top)
In a medium saucepan bring freehak and coconut to a boil, reduce heat and simmer 20-25 minutes per package instructions. Divide into bowls and top with blueberries, sliced bananas if using, and walnuts. Sprinkle with a little cinnamon sugar or sweetener of choice. Enjoy!
